In recent years,China’s retail industry has developed rapidly,among which the convenience store industry has become one of the fastest growing industries.In the new retail environment,convenience stores are gaining more favor from capital and entrepreneurs,and their business is changing,especially with the growing emphasis on fresh food,which has become one of the directions of convenience stores.Fresh food and hot meals are the most profitable segments of convenience stores,with a margin of about 40% on processed food in convenience stores.Making hot meals can help convenience stores get rid of homogenization competition,make high single-store revenue and strengthen the brand’s mental occupation.But it is a challenge for convenience stores to do fresh food and hot meals,which have a shelf life.When products expire,they are destroyed.How to provide customers with cheap hot meals on a low-cost basis and improve customer satisfaction has become the key to competition between convenience stores.So far,how many semi-finished ingredients to prepare in-store,and how to arrange the store’s finished goods inventory on this basis is a problem for convenience stores to consider.In daily life,there is often a phenomenon of excessive deviation of customer demand forecast,which in turn will make the product waste.This situation not only reduces customer satisfaction,but also increases costs.The research object of this paper is the breakfast cake sold by convenience store,which is fresh food products.Considering the problems in the product sales process,the countermeasures are given step by step.Take B convenience store as an example,through the analysis of the present situation,it is pointed out that its problems are caused by the large deviation of demand forecast and the improper control of the inventory of finished goods in the store.This is followed by a specific model plan:First of all,we should construct a more accurate demand forecasting model for the problem of large demand forecasting deviation in the operation of convenience stores.In practice,the forecast of convenience stores is concentrated in the overall large-volume forecast.At the same time,the product turnover in convenience stores is fast and the life cycle is short,so it is difficult to predict demand.On the basis of considering the characteristics of the intermittent demand of convenience stores,the similarity between products is measured by the characteristic analysis of the similarity and similar value of the new product and the previous product.In this paper,a preliminary demand forecasting model is established.a preliminary demand forecasting model.Compared with the previous overall forecast,this model can predict the demand of each sales period of new products,which has certain academic value and practical significance for the discussion of convenience store demand forecast.Secondly,in view of the problem of improper inventory control of mid-product products in convenience store operation,it is to construct an inventory control model.Considering the deterioration of finished goods in inventory,the relationship between sales period and demand is obtained in the pre-requirement forecast,and the maximum target function of benefit is established on the basis of inventory model.After the analysis of the results of the model,some suggestions are made.It also has some guiding significance to reduce the operating cost of the store and improve customer satisfaction. |
