China is a major potato producer,but the data on potato production and consumption are quite different.In 2017,China's potato output was 17.6963 million tons,and the per capita potato output was 12.73 kg.However,according to the FAO Food Balance Sheet,China 's per capita potato consumption in 2017 was 8.72 kg,and the per capita output is larger than the per capita consumption,which is mainly caused by the loss of potato process.This thesis mainly uses research methods that combine field research and statistical analysis to calculate the loss of the main process in the potato supply chain,compares the difference in physical loss and value loss in the four process of harvesting,storage,transportation and sales,finds the subjective and objective factors that cause loss in different process,providing data support for scientific judgment of reduced space for potato's loss,putting forward targeted loss reduction measures and policy recommendations to effectively guide potato production.And based on the cross comparison analysis of different methods in different process of potato supply chain,finding the lowest loss method of the potato supply chain has reference significance for other similar studies.This thesis introduces the loss of potato through the following five chapters:1.From the perspective of harvesting process,the physical loss rate of potato is 5.12%,value loss can be divided into two levels: cost loss and revenue loss,cost loss is 27.73 yuan/t,revenue loss is 60.45 yuan/t.By promoting mechanical harvesting,strengthening knowledge training,and expanding planting scale,the physical loss rate can be reduced by 3.37%,so that the revenue loss can be reduced by 39.77 yuan/t.2.From the perspective of storage process,the physical loss rate of potato is 9.13%,value loss can be divided into two levels: cost loss and revenue loss,cost loss is 6.56 yuan/t,revenue loss is 109.75 yuan/t.By promoting modified atmosphere storage,the physical loss rate can be reduced by 2.48%,so that the revenue loss can be reduced by 29.88 yuan/t.3.From the perspective of transportation process,the physical loss rate of potato is 1.68%,value loss can be divided into two levels: cost loss and revenue loss,cost loss is 2.49 yuan/t,revenue loss is 30.64 yuan/t.By properly ventilated or cryogenic truck transport,the physical loss rate can be reduced by 0.23%,so that the revenue loss can be reduced by 4.18 yuan/t.4.From the perspective of sales process,the physical loss rate of potato is 1.74%,value loss can be divided into two levels: cost loss and revenue loss,cost loss is 25.97 yuan/t,revenue loss is 35.80 yuan/t.By properly ventilated,the physical loss rate can be reduced by 0.58%,so that the revenue loss can be reduced by 11.95 yuan/t.5.Overall,the total physical loss rate of the potato supply chain is 17.67%.From the cost loss,the total cost loss of the potato supply chain is 62.25 yuan/t.From the revenue loss,the total revenue loss of potato supply chain is 236.64 yuan/t.From the perspective of reduced space,the potato supply chain can reduce the physical loss rate by 6.66%.,so that the potato supply chain can reduce the total revenue loss of 85.78 yuan/t.Considering the cross comparison analysis of different methods in different process of potato supply chain from three aspects of physical loss,value loss,revenue loss as a percentage of income,during harvesting process should choose mechanical harvesting,when the storage conditions allow,the storage process should choose a modified atmosphere store for storage,the transportation and sales process remain unchanged,and this combination will achieve the lowest loss in the potato supply chain.Based on the above research,this thesis provide the following policy recommendations: increase the machinery harvesting subsidy,increase the proportion of potato mechanized harvesting;increase the farmers' knowledge training,improve the farmers' farming and harvesting levels;increase support for potato growers,promote large-scale potato cultivation;increase subsidies for potato storage facilities,optimize the layout of potato storage facilities;improve infrastructure construction,promote potato cold chain transportation.
