After germination,several active substances with special physiokigical functions such as the content of γ-aninobutyric acid,which is 2.3 times more than before.Because the germinated brown rice is rich in GABA material,which has enhanced the activation of cerebral blood flow,brain cell metabolism,improved liver function,prevented obesity,bkiod pressure and towered effect.This study has found the resources of brown rice of high y-aminobutyric acid,optimized the germination conditions of high y-aminobutyric acid rice,analyzed the heritability development of the brown rice with GABA,and studied the processing technology of brown rice porriage.The main results are as follows:(1)Selected 3 options from 69 different types of rice rich in GABA excellent germplasm,the red rice 3D955,3D921 and the black rice 3D946.And the percentage of GABA is as high as 20.4 mg11009,18.01 mg/1OOg0 17.93 mg/1OOg accordingly.it is 1.44,1.26,1.25 times of the Shanyou 63.(2)By using orthogonal design experiment and single factor experiment,study the infuence of the soaking time,soaking terrperature,germination time and germination temperature on the GABA percentahe in the rice.the research found that the optimal conditions for germination is as follows:soaking time is 12h,soaking temperature is 30°C,germination temperature is 30oC,germination time is 1sh.Under this conditions,GABA content of the germinated brown rice is 1.12 times than before.(3)We analyzed and evaluate brown rice varieties of instant porridge from the 69 varieties,and selected 3 options which is the most suitable for being processed into instant porridge.Here is 3D987,3D957 and 3D955.3D955 is the red rice it is not onluy suitable for processing into instant porridge,but also that after germination,the GABA content is up to 20.4 mg/100 g.The percentage is the highest one.At the same time,we built the processing technolbgy of brown rice instant porridge.Processing technology:raw rice—removing inpurity ’husking→filter→soaking→germination→the first cooking → soaking →the second cooking → refrigeration →hot air drying →the finished product.(4)Studies have done on the content of GABA in the brown rice before and after germination of 5 male sterile lines,5 restorer lines and their offspring.The results showed that the content of GABA in the brown rice before and after germination were significantly higher than parents,and there is a greatly difference between GABA narrow and broad heritability,and the content of GABA is a high heritablity of traits.In the 9 tested parents,the male sterile line of 78S groiPs with the F1 generation of the germinated brown rice have the highest GCA,respectively 6.87and 4.86.It shows that it can be used for equpping witfi GABA hybrid rice combination.
