The nutrition value of Sesame dregs is high.But it has the disadvantages of poor water solubility,slightly bitter and perishable so that is difficult to be directly developed for food.?-cyclodextrin(?-CD)is widely used in food industry due to its special physical and chemical properties and excellent performance of clathration,it has the functions of protect nutrients,improve the water solubility of nutrients,remove odor and so on.This paper explored a new method of using Sesame dregs directly to make food,clathration and micro powder technology are used to make a kind of Sesame dregs food with high dissolution rate,strong stability and good food sensory traits.HPLC is used to select and identify the sesame dreg,UV tests is used to study the feasibility of the clathration of ?-CD and effective nutrients.The result showed that ?-CD has good clathration with effective nutrients and further tests the apparent clathration constants and optimal clathration rate.Colloid mill method is used to make sesame dregs/?-CD micro powder,DTA/TG and UV-Vis-NIR diffuse reflectance spectrometry is used to identify the formation of micro powder.the tests of solubilization and impact factors are used to verify the performance of micro powder.The result showed that sesame dregs/?-CD micro powder has the feature of clathration,the solubilization and stability of its active nutrients are improved significantly.the water-solubility of sesame dregs/?-CD micro powder is inspected by the index to the content of insoluble and dispersity,the food quality of sesame dregs/?-CD micro powderc is studied by the index to the powder particle size,the content of water and heavy metal,the number of micro-organism and food sensory traits.The result showed that the water soluble rate is higher than 95%,the solution is stable and it has good dispersity.the particle size of micro powder is less than 12 ?m,the content of water and heavy metal and the number of micro-organism are all conform to the food regulations.Its food sensory traits is good,it is convenient to be used and easy to be accepted.In this paper,a new method of using Sesame dregs to make food is explored,which can turn it from waste into treasure:micro powder and clathration technology are applied to Sesame dregs at the same time,this method effectively solves the shortcoming of low rates of resource utilization and poor palatability and offers a simple,excellent performance and convenient sesame dregs/?-CD micro powder food.It also provides a new method and new idea to researching and developing sesame dregs and other urban factory goods.
