With the development of society and economy,people pay more and more attention to the quality of products.The quality of products has an important role in food production enterprises.Although each of the food production enterprises have begun to pay attention to product quality,but most of them are only limited to the quality inspection department inspection report.This kind of ex post control method,although it can ensure the quality,but can not effectively control the production of substandard products,resulting in a lot of waste.In recent years,SPC is used more and more widely in food processing enterprises,through the SPC analysis and monitoring of the production process control in the process,namely through things in control,so as to avoid the generation of nonconforming products in a timely manner,the broad application of this technology to solve many problems can only rely on the post test to control the quality of the enterprise the.With the acceleration of the pace of life and the improvement of consumption level,the market share of quick-frozen instant food is getting bigger and bigger.In this paper,the M company is a company specializing in the production of frozen potato chips frozen food manufacturers,the introduction of SPC technology M company,will undoubtedly bring great benefits to the company.First of all,through a detailed analysis of the principle,classification and implementation of statistical process control and introduces the related theoretical basis;the key quality characteristics in the production process determined by studying the production process of frozen French fries;through the analysis of key indicators of statistical process and combined with the characteristics of production of frozen French fries,to determine the statistical process control standards and methods in the process of production.Secondly,on the basis of data,this paper studies the process and methods of statistical process control,such as cutting,sorting,bleaching and drying.Using Minitab software to make the control chart,identifying abnormal fluctuations,reasons of affecting quality fluctuation,monitor the production process,timely warning and feedback,the evaluation process,the fluctuation of the reaction production process effectively and timely,poor ability to point out of control process problems in the production process,so as to improve the quality of the products,made good effect in the actual application.Thirdly,this paper analyzes the factors of 5M1E(man,machine,material,method,ring,measurement)in the production process,and puts forward the improvement points.The Deming cycle is used to improve the production process.At the same time,we try to introduce SPC real-time monitoring system to monitor the production process in real time,set up the control chart,find out the abnormal and take the corresponding measures immediately.Based on the statistical process control technology(SPC)research on implementation and application of M company,effectively avoid the generation of nonconforming products,reduce waste and improve the stability of frozen French fries in the production process,and provides effective control methods to ensure product quality and quality control of frozen French fries,this method is also applicable to other food production process. |
