A Study On The Symbol Of Hot Pot From The Perspective Of Dietetic Anthropology

From Chongqing hot pot all over the country to the world,to mention Chongqing can think of hot pot as a city business card,from Chongqing hot pot as a form of diet,to it as a local cultural elements present;From Chongqing people are keen to eat hot pot,to they talk about hot pot can often be compared with the personality of the crowd.All this means that Chongqing hotpot has become a regional food symbol and permeates every aspect of Chongqing people's social life.The construction process of symbols is concentrated in the background of the rapid social changes after Chongqing's direct administration,and the symbol meaning of hot pot can not be given without the regional history and culture of Chongqing.In this paper,all kinds of hot pot symbolization process are discussed.Under the guidance of ethnography field survey,literature review,participation in observation and interview were carried out.In order to clarify the symbolic process of hot pot with the participation of all kinds of social forces,understand the symbolic meaning of hot pot conferred by Chongqing people,analyze the social effect of symbol construction in condensing the identity of Chongqing people,and try to interpret the thinking mechanism in symbol practice.The article is divided into three parts.The first part is the introduction,which introduces the reason and significance of this topic,the research context of dietary anthropology at home and abroad and the current research situation of Chongqing hot pot,as well as the research ideas and methods of this paper.The second part is the text,divided into four chapters.In the first chapter,three main theories about the origin of hot pot in Chongqing are summarized,and the key humanistic elements selected in tracing back the history of hot pot origin are analyzed,as well as the root relation between these elements and the connotation of hot pot symbol.The second chapter focuses on the development process of hot pot food and beverage from the minority to the general public,from keen on eating hot pot to paying attention to the image of hot pot,detailing the action of all kinds of official and folk forces participating in symbol construction in this process.From the hot pot's name,appearance and taste,as well as the hot pot's eating behavior,it presents in detail the Chongqing people's standard interpretation of the symbolic significance of the hot pot;the analysis thinks that this set of hot pot symbolizes the meaning of the hot pot.Symbol meaning system fusion into Chongqing people Yin-Yang balanced world outlook,including open wharf culture and other humanistic connotations.The third chapter examines the social effects of the establishment of hot pot symbols in the context of Chongqing's direct administration.The author thinks that the great change of politics and economy after the direct administration has caused the crisis of Chongqing people's cultural identity loss,so Chongqing people use hot pot strategy to express their self-identity in order to distinguish themselves from other people,such as Sichuan people,and so on.The symbol of hot pot condenses the identity of Chongqing people and participates in the reconstruction of group boundary.In the fourth chapter,according to Chongqingpeople's use of hot pot symbols in social life,the author makes a comprehensive analysis of people's likeness.The mechanism followed by the practice.By shaping the special diet symbol,people realize the self-representation of the group,and through the manipulation of the symbolic meaning,the hot pot is used to metonymy the self in the social life.The third part is the conclusion.By reviewing the process of the symbolization of the hot pot in Chongqing,it is further discussed that in the specific historical context,people are closely related to the population,food and region by means of means.The culture of Chongqing from top to bottom is a symbol of practice,and the social individual of a complex is unified under the will of the group,so that the mass of the society can be imported into the process of mass molding in the unconscious state.
