| Cucumis melon L.,also known as melon and cantaloupe,is an annual herb of the cucurbitaceae melon.The fruit is rich in nutrients and has health benefits.The high-quality melon varieties have a strong advantage in production and application,and are the fruits of many consumers.Because of the high quality indicators of melons,they are greatly influenced by the personal preferences of the evaluators.Generally,the quality evaluation of fruit is carried out by sensory identification method,instrument detection method,mathematical analysis method,etc.The scientific method is of great significance for identifying the quality of melon.In this experiment,32 melon germplasm resources were used as materials.Firstly,the sensory panel was used to evaluate the aroma,juice,texture,appearance and taste of melon pulp,and then the organic acid,vitamin C,soluble total sugar and soluble protein content were determined.Equal physical and chemical indicators,using the fuzzy mathematics membership function value method for tasting scores and measurement index results,single-layer and double-layer fuzzy comprehensive analysis,judging the pros and cons of germplasm resources,and comprehensive evaluation results with glucose,fructose and sucrose The correlation was analyzed for the content.The main results obtained are as follows:1、Among the 32 melon materials,the results of the single-layer comprehensive evaluation of the sensory index by the fuzzy mathematical analysis method,the ‘Tiannu ju’,‘Red Rose’,‘0537’ ranked in the top three;the single-layer comprehensive evaluation results of physical and chemical indicators in the middle,‘TianBao’,‘Red Jinbao’,‘Jiuhong’ ranked in the top three;in the results of double-level evaluation of sensory indicators and physical and chemical indicators,‘Tiannu ju’,‘0537’,‘TianBao’ ranked in the top three Bit.2、The fuzzy evaluation value of melon quality was significantly positively correlated with the aroma,texture,taste,juice,soluble total sugar and vitamin C content,and the correlation with appearance,organic acid and soluble protein content was not significant.Fruit glucose has a greater impact on quality than sucrose and fructose.3、The sugar content of different types of melons showed a trend of increasing first and then decreasing,and the highest in maturity.The changes of glucose,sucrose and fructose contents in fruits were different.Among the 9 melon materials,‘TianBao’,‘0651’and ‘Tiannu’ belonged to glucose accumulation type,‘NSL60241’belonged to fructose accumulation type,‘Prince 2’and ‘Tiannu ju’ is a co-accumulation type of glucose and fructose. |
