| This experiment studied the muscle fiber characteristics and muscle chemical composition of Jinfen white pig and Dujin commercial pig(Dujin pig).A total of 30 individuals aged 180-day-old of each breed were used in this study.Muscle fiber diameter,muscle density,cross-sectional area and collagen volume ratio were measured based on HE and Masson staining.q RT-PCR was employed to investigate TMOD1 m RNA expression.At the same time,the muscle amino acid composition,fatty acid content and etc.are tested,and the results are as follows:(1)Compared with Jinfen white pigs,the muscle fiber diameter of Dujin pigs was significantly decreased(P<0.01),and the cross-sectional area of muscle fibers was significantly decreased(P<0.05),but the muscle fiber density was significantly increased(P<0.01),as well as the collagen volume ratio increased significantly(P<0.05).In the process of muscle-related gene detection,the expression of TMOD1 gene in Dujin pigs was significantly higher than that in Jinfen white pigs(P<0.05).(2)The protein content of the longissimus dorsi of Jinfen white pig was significantly higher than that of Dujin pig(P<0.05).Among the umami amino acids,the highest content is glutamic acid,followed by aspartic acid.Among the umami amino acids,except that there was no significant difference in glycine between the two groups,other umami amino acids showed extremely significant difference between the two groups(P<0.01).Among the essential amino acids,the total content of Jinfen white pigs was significantly higher than that of Dujin pigs.The highest lysine content in Jinfen white pigs(2.14%)was significantly higher than that of Dujin pigs(2.01%).(3)A variety of fatty acids were detected in the muscles of Jinfen white pig and Dujin pig.The intramuscular fat content,saturated fatty acid content,unsaturated fatty acid content,linoleic acid and other polyunsaturated fatty acids in Dujin pigs were significantly higher than those in Jinfen white pigs(P<0.05).In the content of unsaturated fatty acids(such as C18:1n9c,C18:3n3,C18:2)in Dujin pig,the content of C18:3n3 was the lowest,and the coefficient of variation was 14.51%,which was significantly different from that of Jinfen white pig(P<0.01).The coefficient of variation of unsaturated fatty acid C18:1n9c in Jinfen white pig was 17.68%,and the coefficient of variation of Dujin pig was 7.91%,and the content of C18:1n9c in Dujin pig was significantly higher than that in Jinfen white pig(P<0.01).The C18:1n9c unsaturated fatty acid has the highest content in the unsaturated fatty acids of Jinfen white pig.In the content of saturated fatty acids(such as C11:0,C16:0,C18:0,C14:0),the content of myric acid in Jinfen white pig was the highest,and the coefficient of variation was 12.05%.The content of stearic acid was the lowest,and the coefficient of variation was 14.77%.The palmitic acid content of Dujin pigs was significantly higher than that of Jinfen white pigs(P<0.01). |
