This trial was conduced to study the local germplasm characteristics of black pigs.The black pigs were feeded with nonantibiotic diets in the whole life,the growth period of 12 months,the average slaughter weight was 93.7±9.71 kg.Growth environment was full of mountain landform and fruit trees.The article mainly study on carcass performance,amino acids and fatty acids,immune function and monocyte chemoattractant protein-1(MPC-1)of black pigs,for improving information database of germplasm resources of the local black pigs.Research results:1.The slaughter rate is 66.35±2.47%,lion eye area is 29.11±8.69cm2,slaughter weight is 93.7±9.71 kg,carcass length is 94.83±1.72 cm,the average backfat thickness is 3.5±0.37 cmof black pig.2.The research shows that 14 types of fatty acids were isolated and identified from muscles of free-ranging black pigs.The main compositions was palmitic acid(21.13%),stearic acid(11.17%),oleic acid(37.06%),linoleic acid(22.15%)linolenic acid(1.84%),respectively.There were 34.48% of saturated fatty acid(SFA),39.92% of monounsaturated fatty acid(MUFA)and 24.99% of polyunsaturated fatty acid(PUFA).Polyunsaturated fatty acids(PUFA)?-6/?-3 = 12.04:1.3.The black pig meat had its unique flavor,isolated and identified 17 kinds of amino acids.The flavor amino acids was 80.62% of total amino acid,the glutamic acid accounted for more than 17%,EAA/TAA and EAA/NEAA ratio are higher than the standard FAO/WHO model,so it belongs to the high quality protein of pork.4.Immunoglobulin was 1.29 ±0.11 g/L(Ig A)?2.42 ±1.10 g/L(Ig M)? 21.19±0.73g/L(Ig G),respectively.There is no significant difference index between the determination of pigs and sex(P>0.05)in serum biochemical indices.The total protein content in serum biochemical index was 59.04 g/L,and the urea nitrogen content was5.21 mmol/L,which was consistent with the growth and development rule of the black pig breed for 12 months.5.There is no significant difference in the expression of monocyte chemoattractant protein-1(MCP-1)m RNA in heat?liver?spleen and lung.(P > 0.05).The local black pig rearing mode,the local black pork product has rich nutrition,good taste,rich meat.The expression level of different immunoglobulin content and higher visceral MCP-1m RNA is not significant,fully embodies the characteristics of local varieties black pig disease resistance strong,reflecting the stability of the local black pig group the level of human health.In conclusion,the above results improve information database of germplasm resources of the local black pigs.For breeding local black pig varieties and preparing materious.
