The purpose of this experiment is to explore the chronic ammonia stress on growth performance,meat quality and its related gene expression,immune function,organ and tissue morphology and lipoic acid added to the effect.A total of 180,twenty one-day-old male broiler chicks were randomly divided into four groups,each group had six replicates,and each replicate contained 10birds:control group,ammonia stress group(70 ppm ammonia concentration,ammonia stress lipoic acid group(70 ppm ammonia concentration,300 mg / kg lipoic acid),the trial period for 21 days.The results show that(results):1.Ammonia stress reduces the poultry production performance and the influence of chicken breast muscle incarnadine,and make the chest antioxidant performance degradation;in the ammonia stress,lipoic acid was added to the average daily gain was significantly higher(P < 0.05),feed conversion ratio decreased significantly(P < 0.05),breast muscle color b* value,L*value and drip loss significantly reduced(P < 0.05),p H was significantly higher(P < 0.05),and significantly improve pectoral muscle GSH PX activity(P < 0.05)and decreased the content of MDA(P < 0.05).2.Ammonia stress has influence on the chicken respiratory and digestive system,make the tracheal mucous membrane peeling,mucus secretion increased,atrophy of alveolar rupture,the phenomenon such as thickening of alveolar walls;Ammonia stress reduced the height of the small intestinal villus,significantly reduced the duodenum villus height and crypt depth ratio(P < 0.05);To some extent,the addition of lipoic acid can alleviate the effect of ammonia stress;compared with the control group,the ammonia stress reduces the thymus index(P<0.05),spleen and bursa index(P>0.05),significantly increased the content of immunoglobulin lg M and decreased on immunoglobulin lg A,lg G;In the ammonia stress conditions found that lipoic acid added can improve the index of immune organs and immune globulin lg A,lg G level,but had no significant effect on lg M.3.compared with the control,Ammonia stress decreased the relative expression of m RNA gene Myo D?Foxo1?PGC-I?and Col3a1,especially the PGC-I?and Foxo1 gene m RNA expression significantly reduced(P<0.05);In the ammonia stress,Lipoic acid addition cansignificantly increase the amount of expression of Myo D and Fox O1 m RNA(P<0.05)and PGC-I and COL3A1 gene expression change was not significant.Through the experimental study,ammonia exposure produced by chronic stress can induce the body produces oxidative stress and immune stress reaction,also can cause oxidative damage to some important organs,lead to physical defensive series of reaction,the consequences are led to the decrease of the chicken body physiological function fully,which eventually led to the decrease of the growth performance,meat quality;And add a certain amount of lipoic acid in the diet can reduce ammonia stress effect on the performance of poultry production,and have certain regulation effect to meat quality improvement.
