Selenium(Se)is an essential trace element for human body.As the important part of selenoenzymes,Se has antioxidant activity,antitumor activity and activity of enhancing immunity.Se is of great importance to human health.But 72%regions of China are ares of heavy deficient in selenium where daily dietary intakes of selenium in resident are below the standard according to Chinese Nutition Society.Consequently,it’s of great importance to find a scientific ways to reinforce Se.Some researches show that edible fungi have strong capacity of Se enrichment.As the highest-yielding edible fungus in China,Lentinula edodes has high nutritional and medicinal value whose principal active fraction—Lentinan has antioxidant activity,antitumor activity and activity of enhancing immunity.Hence,it’s of important theoretical significance and practical value for developing selenium resource and producing Se-enriched L.edodes products that chosing L.edodes as selenium carrier to cultivate Se-enriched L.edodes.This study used spring shelf-cultivation and autumn shelf-cultivation to reseach the Se enrichment of L.edodes in two years.To find the Se enrichment law of L.edodes,this article studies the influence of culture temperature,species of L.edodes,concentration of selenite(Na2SeO3)in media to the Se enrichment of L.edodes.To develope the critical production technology,some additives and some Se-enriched cultivating materials such as Se-enriched rice bran,Se-enriched wheat bran,Se-enriched corn were added to media to study the influence to Se enrichment of L.edodes.Besides,this article also analysed the limited amount of fruit body.Main results are as follows:1.The capacity of Se enrichment of L.edodes mycelium could be inhibited significantly when the temperature was too high.The species could make a difference to the capacity of Se enrichment in L.edodes.The capacity of Se enrichment of 9608 was significantly higher than the other species in spring shelf-cultivation.2.In spring cultivation,the Se content of fruit body was significantly positively correlated with the Na2SeO3 concentration in compost.Total Se content and Organic Se content was significantly positively correlated with the Na2SeO3 concentration in compost.However,the percentage of organic Se content out of the total Se content decreased whenNa2SeO3 was added to compost.Adding Na2SeO3 to compost had no influence to the yeild of fruit bodies of 1st crop.Cd content of L.edodes fruit body had a positive correlation with Na2SeO3 concentration when the compost was polluted by CdCl2.There were no significant correlation between Cd content of fruit body and the Na2SeO3 concentration in compost when there were no Cd pollution.There were large differences among parts of fruit bodies.The order is gills>caps>Stipes.The percentage of organic Se content out of the total Se content in caps was higher than that in Stipes.3.In autumn cultivation,he Se content of fruit bodies was significantly positively correlated with the Na2SeO3 concentration in compost.The yeild of fruit bodies of 1st crop had a significant and negative correlation with Na2SeO3 concentration in compost.Adding Na2SeO3 has no influence to the acculation of heavy metal Cd and As in L.edodes.4.Gypsum could promote the Se enrichment in L.edodes.The optimum gypsum content is 2%in sring cluvation,3%in autumn cluvation.Adding Fe(Ⅲ)could promote the Se enrichment in L.edodes without affecting the yield.5.Se-enriched L.edodes could be obtained when the Se-enriched rice brane,Se-enriched wheat brane or Se-enriched corn was added in compost without affecting yield.
