Yogurt is a kind of dairy product that has gone through the fermentation process.After pasteurization,the raw materials of milk are added with bacteria called fermentation agent which are beneficial to human health.The pasteurized milk with white lotus and Chinese yam were fermented ed,followed by cooling and filling,and then sold in the market.When compared with milk,yogurt not only retains the nutrients of milk,but also improves the utilization rate of different nutrient elements,making it easier to be digested and absorbed in the human.It was reported that yoghurt is one of the best sources of nutrition for human.Moreover,it can ameliorative lactose intolerance,accelerate movement of intestines and stomach,prevent ageing,fight against tumor,lower cholesterol content and blood lipids.Accordingly.it is well welcomed by consumers.White lotus not only has high nutritional value,but also has many medicinal function.It has high content of protein and carbohydrate,multiple vitamins.Moreover,ithas functions of nourishing the mind and calming the mind,clearing away heat and decreasing internal heat,preventing cancer.and enhancing immunity.Chinese yam contains a large amount of slime,in which the main components included more than 10 kinds of essential amino acids,and it has a special role in human health,especially beneficial to spleen and stomach and kidney,which can improve indigestion,prevent connective tissue atrophy,active male hormone,resulting in people love to eat white lotus..The technical design of the production process is based on the traditional yoghurt processing,where milk mixed with white lotus and yam for the fermentation,resulting in a new kind of yoghurt.This yoghurt with white lotus and yam retained the ordinary yogurt flavor and nutrition,integrated the flavor and health function of the white lotus and yam.,leading to extend varieties of yogurt and increase the additional value of yogurt.a Therefore,it is a healthy food for people with poor physical condition.Solidifying yoghurt is becoming a main product of yogurt market in China,and it has broad market potential for developing.The white lotus and yam were used as additives,followed by fermentation with milk,and the amount of yam starch,sucrose,white lotus juice and inoculation quantity on quality of the yoghurt were investigated,leading to optimized parameters for fermentation.Design of plant with annual output of 3000 tons of white lotus yam solidified yogurt were successfully performed to meet the current market demand,providing reference for the industrialized production of this yoghurt in the future.
