In this paper,the basic nutritional indexes of pigeon eggs were determined,and the main nutrients of other eggs?goose eggs,duck eggs,eggs,eggs?were compared.On this basis,the main proteins in pigeon eggs were qualitatively detected and the ovotransferrin with antioxidant activity was isolated and identified.In addition,in vitro antioxidant and cellular antioxidant activation indexes of egg transferrin were compared with egg transferrin.The results were as follows:egg protein content 11.80±0.10 g/100g?fat content 12.78±0.26 g/100g,rich in mineral potassium 146.33±1.52 mg/kg?calcium 362.01±2.64 mg/kg?iron 101.41±0.36 mg/kg?phosphorus 1108.33±2.08.The contents of proline?0.46±0.01g/100g?in egg amino acids were significantly higher than those in other eggs?p<0.05?,which showed the advantages of collagen supplement.Other than the above indexes,the other indexes of pigeon eggs were significantly higher than other eggs,and the other indexes were not significantly different from other kinds of eggs,among which the essential amino acids of children were significantly lower than those of other eggs,0.71±0.03 g/100g,and the saturated fatty acid content was significantly lower than that of other eggs,accounting for only 31.51%of the total fatty acids.The extraction of egg transfer ferritin from pigeon eggs was carried out by two times ethanol extraction method combined with ultrafiltration.The best process of two times ethanol extraction test was as follows:after separating the egg white and adding magnetic stirring 1.9 h,the first ethanol concentration was 44.7%,and the stirring was static for 2 h.after centrifugation of 5766 r/min,the supernatant was treated with 64.7%ethanol final concentration,and the precipitate was obtained by centrifugation at the same speed.final obtained protein extraction was 1.028 g/100g,purity was 95%.the same method was also used to extract and identify egg transferrin in preparation for subsequent antioxidant experiments.The results showed that DPPH?hydroxyl radical scavenging ability,iron ion reducing ability and superoxide anion radical scavenging ability were better with the increase of egg transfer ferritin concentration.The concentration range of egg transfer ferritin was0.2,0.4,0.6,0.8,1.0 mg/mL,pigeon egg and egg were 9.40-54.33%,8.13-50.66%,respectively.The scavenging capacity of 24-0.95 Abs?0.23-0.94 Abs;for superoxide anion radical is16.86-54.20%,18-50.53%,and for DPPH is 32.56-51.26%,28-47.76%.the results of the cell antioxidant activation index test showed that otoferritin alleviated H2O2 induced oxidative damage in human colon cancer cells?HT-29?,human cloned colon adenocarcinoma cells?Caco-2?,and human skin fibroblasts?HSF?.The role of egg transferrin in pigeon eggs is slightly better than that of egg transferrin extracted from eggs.
