| Ginseng(planted for three years or less)as a homologous raw material for medicine and food,and Aronia,as a new resource food,is very popular in the market and has many benefits to human health.Human participation in ginseng and aronia are rich in nutrients.in this study,ginseng was used to collect the extract by boiling in water,and the juice of aronia to pure water was restored at 1:5,and then mixed with sweeteners(xylitol,erythritol,mogroside),citric acid and sodium carboxymethyl cellulose through blending,degassing,sterilization and filling to prepare a beverage with rich taste and rich nutrition.Through the determination of indicators and nutritional components according to national standards and references to ensure that it has a certain function and is loved by people.The specific research process and conclusions are as follows:(1)The technology of ginseng-aronia beverage was studied.Ginseng uses the water boiling method to collect the extract,extract it repeatedly for three times in a constant temperature water bath,collect the extract three times,and then centrifuge and filter the sediment with a centrifuge after cooling.it was determined that the ratio of aronia to pure water was 1:5,and then centrifuged and set aside.The optimal addition amount of xylitol,erythritol and Luohanguo glycoside was determined by response surface method.through the analysis of the related factors,it was found that the total score of sensory evaluation of sweeteners was in the following order: Luohan fructose glycoside >erythritol >xylitol.Then five different concentrations of ginseng water extract,aronia,sweeteners and citric acid were selected to design the single factor experiment,and the response surface method was used to optimize the formula through sensory evaluation.According to the analysis of the relevant factors,the total score of sensory evaluation of ginseng-aronia beverage is in the following order: ginseng water extract > aronia > sweetener > citric acid.Finally,the electronic tongue was used to verify the sensory flavor of the beverage.The final formula of the sweetener is erythritol 5%,xylitol 2%,mogroside 0.02%,and the highest sensory score is 94.45.The formula of ginseng-aronia beverage is as follows: aronia 40%,ginseng water extract 30%,pure water 22.55%,sweeteners 7%(erythritol 5%,xylitol 2%,mogroside 0.02%).Sodium carboxymethyl cellulose 0.3%,citric acid 0.15%,the highest sensory score was 97.54.The beverage is prepared by blending,degassing,sterilization,filling and other processes.the color of the product is red and uniform,with light and unique typical ginseng flavor and mellow flavor of aronia,sour and sweet,full and mellow taste,uniform and stable,good fluidity and no stratification.(2)Determination of indexes and analysis of antioxidant activity of ginseng-aronia beverage.In this beverage,the p H is 3.33,the total soluble solids is 10.63 Brix°,the content of total acid is 3.12 g/kg,the content of ginsenosides is 0.8 g/ml;the content of total flavonoids is 2.39 mg/ml;the content of anthocyanins is 0.162 mg/g;the content of total phenols is 27.45 mg/ml,the content of total sugars is 8.67 g /100 ml;the results of microorganisms are all in line with the national standard.The antioxidant activity of the ginseng-aronia beverage was evaluated by in vitro antioxidant activity method and indirect in vivo antioxidant activity method.The scavenging rate of ABTS free radical was 90.6 ±2.62%.The scavenging rate of ABTS free radical was 77±1.85%.The antioxidant activity was 830 ±59 μmol Trolox /100 g by PSC,a cellular antioxidant activity(CAA)method was used to assess,result showed 676.51 ±24 μmol/100 g in the presence of PBS wash.While in the absence of wash PBS was 1225.71 ±110 μmol Q/100 g,which indicated that the ginseng-aronia beverage had strong antioxidant capacity.(3)The anti-fatigue activity of ginseng-aronia beverage was studied.The experimental mice were divided into four groups and fed by stomach for 30 d,and then the weight-bearing swimming test and pole climbing test were carried out,and then the indexes of liver glycogen,muscle glycogen,blood urea and blood lactic acid in the mice after exercise were determined.the endurance and physiological and biochemical indexes of mice were compared and analyzed to understand the anti-fatigue activity of ginseng-aronia beverage.The results showed that the beverage could prolong the swimming and pole climbing time of mice,and all the indexes in the low dose group were better than those in the control group,and the anti-fatigue activity was more obvious in the middle and high dose groups. |
