Quorum sensing system is a mechanism of information exchange between bacteria.It produces and senses N-acyl-homoserine lactones to monitor population density and regulate many physiological functions of bacteria,such as bioluminescence,bacterial movement,toxin secretion,biofilm formation and the production of other secondary metabolites.When bacteria carry out these physiological activities,they will cause food corruption.Quorum sensing inhibitors are substances that can destroy or interfere with the QS system among bacteria.The ideal QS inhibitors have been defined as chemically stable and efficient low molecular weight molecules,which have high specificity for QS regulation and have no side effects.Aquatic products are indispensable food in our life.They are not only rich in nutrition,but also have delicious taste.However,due to soft muscle tissue,high water content,and easy oxidation of unsaturated fatty acids,they are prone to corruption in the process of storage and transportation.The deterioration of aquatic products will cause serious economic losses.There are many reasons for the deterioration of aquatic products.The mechanism of corruption is related to the complex changes of biology,chemistry and physics.It is found that microorganisms are the most common cause of spoilage of aquatic products.In recent years,different types of signal molecules have been detected in the food spoilage caused by microorganisms,and the expression of virulence factors and decay factors are mainly mediated by AHLs in fish spoilage bacteria,thus affecting the spoilage of aquatic products.The quorum sensing system is involved in the regulation of microbial spoilage.Aeromonas salmon is a kind of spoilage bacteria of aquatic products.The inhibition effect of 1,10-decanediol on the colony induction of A.salmon was studied.And the effect of 1,10-decanediol as a preservative on Larimichthys crocea.The results show that:1.In this study,1,10-decanediol was used as the research object.The Anti-quorum-sensing activity of 1,10-decanediol was verified by the production of characteristic purple bacteriocin of Chromobacterium violaceum CV026,and the inhibition effect of 1,10-decanediol on quorum sensing and putrefaction of Aeromonas salmon was explored under the condition of sub-minimal inhibitory concentration.The results showed that 1,10-decanediol had a strong inhibitory effect on the extracellular protease activity,swarming and swimming motility,biofilm formation and other related corruption characteristics of A.salmon,and the inhibitory effect was enhanced in a concentration dependent manner.When the concentration of 1,10-decanediol was 0.4 mg/mL,the extracellular protease activity of A.salmon was obviously weakened,and its movement ability was alsoweakened,and the formation rate of biofilm was reduced by 76.92%.It can be seen that 1,10-decanediol has a good effect of quorum sensing inhibition,which can be used as a new quorum sensing inhibitor for preservation of aquatic products.2.When 0.1mg/ml 1,10-decanediol solution was added,the pH value and NaCl mass fraction of A.salmon were changed.It was found that the inhibition of1,10-decanediol on quorum sensing of A.salmon was enhanced when the external conditions were acidic and alkaline;When the mass fraction of NaCl increases from 1% to 2%,the inhibitory effect of 1,10-decanediol on quorum sensing of A.salmon will be weakened,and when the mass fraction of NaCl increases to 3%,the inhibitory effect of 1,10-decanediol on quorum sensing of A.salmon will be enhanced.3.Different concentrations of 1,10-decanediol solution were used to preserve Larimichthys crocea fillets,to explore the sensory score and freshness of Larimichthys crocea fillets during storage.The results showed that the shelf life of the control group was only about 6 days,while that of the treatment group with1,10-decanediol solution reached 14 days,8 days longer than that of the control group;It was also found that the effects of different concentrations of1,10-decanediol solution on TBA and water holding capacity of fillets were similar in prometaphase storage,and there were significant differences at the beginning of the 12 th day.Analysis combined with other indicators,the higher the concentration of preservative was,the better the effect of preservation was.
