| With the development of economy and improvement of people’s living standard,people are demanding higher and higher quality of smoked food.As an important processing machine for smoked food processing,its performance directly determines the appearance and flavor quality of smoked foods.In the process of smoked food,the most important influence on the appearance and flavor quality of smoked food is the flow field distribution of smoked gas in the heating chamber of the smoked oven.The key technologies of the flow field include the design technology of variable diameter of gas chamber of smoked oven,air flow regulation technology of smoked oven heating chamber and optimization technology of fan for smoked oven.Based on the theoretical knowledge of computational fluid dynamics and other disciplines,this paper has used CFD technology and experimental verification methods to study.This paper has studied the key technologies of controlling the gas flow in the heating chamber of the smoked oven.The main research work and achievements are as follows:(1)Aiming at the working characteristics of smoked oven for food processing,the simulation model of original gas chamber of smoked oven has been built and analyzed.Based on the CFD simulation software,the simulation model of the original gas chamber of the smoked oven has built to simulate and solve,and the velocity field in the ideal state of the smoked oven has been obtained.It has designed smoked oven experiment scheme and has built the experiment platform,the simulation data and experimental data have been compared and analyzed to verify the rationality and correctness of the simulation modeling of the original gas chamber of the smoked oven.(2)Aiming at the analysis results of the original gas chamber of the smoked oven,two structural improvement schemes have been proposed for the original gas chamber of the smoked oven.Namely,the variable diameter structure model of the gas chamber of the smoked oven and the multi-pipe connection model of the gas chamber of the smoked oven.And based on the CFD simulation software,the two models have been simulated respectively,and the simulation results of the two models have been compared and analyzed to find the optimal improvement scheme.(3)The gas chamber of the smoked oven after structural improvement has been applied to the smoked oven.By comparing the flow field distribution of the smoked oven under different gas intensity on the two sides of the smoked oven,an ideal working mode of the smoked oven has been proposed.It has studied heating chamber of smoked oven flow field distribution in different working mode.This paper has studied the flow field distribution of smoked oven heating chamber under different working modes,and the process parameters of the smoked oven have been improved by taking the smoked meat products as an example.The suitable process parameters for the characteristics of the smoked oven have been obtained,and it can save smoking time 6 minutes.(4)Simulation modeling and analyzing of the fan for the smoked oven has been carried out.Based on CFD simulation software,considering the specific structure of the fan used in the smoked oven,the simulation model has been established to obtain the distribution of velocity field and pressure field under the ideal state of the fan used in the smoked oven.The simulation data has been compared with the laboratory data provided by a smoked oven manufacturing company to verify the correctness an experimental data rationality of the simulation model of the smoked oven.(5)Aiming at the working characteristics of smoked oven in food processing,the performance of fan used in smoked oven has been studied in order to achieve larger air volume.Further,smoked oven with fan air volume as the optimization goal target,the specific structure as constraint condition,an optimal mathematical model of fan for smoked oven has been established.Through optimization analysis,making smoked oven with the air volume of fan have increased 27.57% than the original.And the optimized fan for smoked oven has been applied to the studied smoked oven.The optimized fan had been applied to the smoked oven and its total air volume has increased by 4.02 m/s.In summary,according to the special requirement of fuming air in smoked oven,the key factors and corresponding technologies affecting gas flow performance in smoked oven heating chamber have been studied in this paper.A simulation model has been established for the original gas chamber of the smoked oven,and the structure has been improved.CFD simulation has been used for calculation and analysis,and an experimental scheme has been designed to verify the rationality and accuracy of the simulation.The improved gas chamber of the smoked oven has been applied to the smoked oven.According to the gas distribution in the air inlet of the heating chamber of the smoked oven,an ideal cooperative working mode of the smoked oven has been put forward,and the technological parameters of the smoked oven have been improved.In this paper,the simulation model of the fan used in the smoked oven has been further studied,and the air volume of the fan has been optimized according to the characteristics of the smoked oven.Finally,the optimized fan for smoked oven has been applied to the smoked oven for experimental verification.The work in this paper is helpful to optimize the distribution of flow field inside the smoked oven and improve the quality of smoked products.
