| Asparagus is a perennial herb of Asparagus in Liliaceae,It is a valuable vegetable that can be eaten and used medicinally.The tender stem and fibrous roots of asparagus contain various active ingredients such as polysaccharides,polyphenols,flavonoids,saponins,rutin,choline,etc.Among them,saponins are one of the main active ingredients,and their physiological activities have been reported.Asparagus extract has significant inhibitory effect on cancer cells.Among them,steroidal saponin is an important active ingredient.Asparagus extract contains various steroidal saponins,most of which are saponins.Modern pharmacological research has proved that the flavonoids and saponins contained in asparagus have the functions of enhancing human immunity,anti-tumor,lowering blood lipid and protecting liver.In order to study the technology of biological fermentation of asparagus,this paper optimized the production process of asparagus juice fermented by Angel Yeast by response surface method on the basis of single factor experiment,and applied it to the industrial scale-up production of asparagus juice oral liquid,and designed the corresponding production workshop.The main research contents and results are as follows:Firstly,taking the total saponin content as the response value of asparagus juice,and the relevant factors as independent variables,the response surface experiment scheme was designed,and the influencing factors were as follows:fermentation time,inoculation amount,fermentation temperature,etc.The data showed that the primary term X1(inoculation amount),X2(fermentation temperature),X3(fermentation time)and the secondary term reached extremely significant levels(P<0.01).Through the analysis of the data,it is concluded that the optimal technological conditions for Angel yeast to ferment asparagus juice are inoculation amount:0.2%,fermentation temperature:30℃and fermentation time:7 days.Secondly,the results showed that asparagus juice could promote the rate of sleep in mice injected with subthreshold dose of barbital sodium.It could significantly shorten the latency of sleep in mice.It could prolong the sleep time of mice induced by barbital sodium.According to the judgment standard of improving sleep function in"Technical Specifications for Health Food Inspection and Evaluation"in 2003 edition,the bio-fermented asparagus juice has the effect of improving sleep function.Thirdly,anasparagus juice fermentation and oral liquid production line was designed,including the layout design of fermentation and oral liquid production workshop,such as the batching room,fermentation room,storage tank,separation of people and logistics,material and equipment selection etc.The pilot test and engineering design were carried out.The layout design of the workshop could obviously meet the requirements of the enterprise.This work has a certain reference value. |
