The main research contents of this thesis include: Qualitative and quantitative analysis of aroma compounds in Langjiu;Studying the interaction between important aroma compounds.Three kinds of Langjiu were analyzed by headspace solid-phase microextraction(HSSPME)combined with gas chromatography-mass spectrometry(GC-MS)and gas chromatography sniffing instrument(GC-O).A total of 67 aroma compounds were identified in the three liquors.A total of 31 key aroma components were obtained by quantitative analysis and calculation of aroma activity value(OAV)(OAV≥1).The sensory attributes of Langjiu were studied by sensory analysis,including sauce note,sour note,cellar note,scorched-roasted note,fruity note,floral note,grain note.By scoring the aromas of the three kinds of Langjiu,the differences in sensory attributes between the three kinds of Langjiu were analyzed.The most significant of the three kinds of Langjiu were sauce note,scorched-roasted note and fruit note.Missing tests were performed on key ester compounds,and the ester compounds with higher significance were screened,namely ethyl acetate,ethyl 2-methylbutanoate,ethyl 3-methylbutanoate,ethyl hexanoate,and ethyl phenylacetate.The five ester compounds were mixed in pairs,and the interaction relationship between the mixtures was studied by the S curve method and the OAV method.The results showed that there had addition effect between ethyl acetate and ethyl 2-methylbutyrate,and there had synergistic effect between the other nine compounds.The results of S-curve method and OAV method were consistent.The vector model was used to study the interaction between ethyl acetate and ethyl hexanoate,ethyl acetate and ethyl 2-methylbutyrate mixture.The results showed that there was a good linearity between the aroma intensity of the mixture and the sum of the aroma intensity of the individual components.relationship.Interactions between aldehyde compounds(2-methylbutyraldehyde and 3-methylbutyraldehyde)and alcohol compounds(butanol and hexanol)with similar molecular structures using PDE model and σ-τ diagram method.The effect was studied,and it was found that the effect of aroma compounds on the strength of the mixture in the PDE model was proportional to its proportion in the mixture and the PDE model had a good predictive performance for the strength in the mixture.The σ-τ diagram method results show that there was an additive effect between the aldehyde mixture and the alcohol mixture.
