Garlic bolts is one of the specialty and popular vegetables in China for its unique flavor.At present,most of the long-term storage of garlic bolts in China was used the combination technology of modified atmosphere packaging low-temperature,which basically achieved annual supply.However,as one of the longest and the largest storage of vegetables,garlic bolts have serious quality loss in logistics and transportation.Chinese cold chain system of agricultural product has not been completed,and there are breakpoints,which seriously restrict the development of garlic bolts cold chain logistics and transportation.Therefore,it is very important to seek a replaceable safe and efficient way of logistics and storage.Compared with the traditional atmosphere,O2/CO2 controlled atmospheres has a unique advantage in broccoli storage and residual effects,ginger storage and pest control.In this research,the O2/CO2 mixed gas with different initial proportion was set,and the physio-chemical indices and quality of garlic bolts were periodical determined,the aim was to explore the feasibility of O2/CO2 active modified atmosphere packaging for short-term storage of garlic bolts,the results of this experiment could provide a theoretical basis for the short storage of garlic bolts during logistics and transportation.The research results are as follows.1. One-way analysis of variance,principal component analysis,correlation analysis,and path analysis were used to investigate the effect of active modified atmospheres packaging on storage quality of garlic bolts.The treatments of initial O2and CO2 proportions including 80%O2+20%CO2,90%O2+10%CO2,100%O2 and natural air?CK?were employed.During storage at 10±0.5?,the physio-chemical indices and quality of garlic bolts were periodical determined.The results showed that100%O2 treatment significantly inhibited the increase of relative conductivity,delayed the decrease of hardness,springiness and cohesiveness,and maintained high ascorbic acid content.Correlation analysis indicated that there was correlation between quality indexes.Principal component analysis showed that 100%O2 and90%O2+10%CO2 treatments prolonged storage time,100%O2 treatment has the longest shelf life,more than 21 d.Path analysis further demonstrated that L*and hardness had a greater direct effect on the weight loss rate of garlic bolts,and the other indicators had indirect effect by these two indicators.2. The treatments of initial O2 and CO2 proportions including 70%O2+30%CO2,80%O2+20%CO2,90%O2+10%CO2,100%O2 and CK were employed.During storage at 20±0.5?,the physio-chemical indices and quality of garlic bolts were periodical determined.The results showed that 80%O2+20%CO2 treatment significantly inhibited the increase of weight loss rate and rotting rate,delayed the accumulation of MDA and the decline of hardness,retarded the appearance of soluble solids and chroma H peak,maintained high ascorbic acid and chlorophyll content.70%O2+30%CO2 and 90%O2+10%CO2 treatments also have a certain storage effect on garlic bolts,but which was inferior to the treatment of 80%O2+20%CO2.3. The treatments of initial O2 and CO2 proportions including 60%O2+40%CO2,70%O2+30%CO2,80%O2+20%CO2,90%O2+10%CO2 and CK were employed.During storage at 25±0.5?,the physio-chemical indices and quality of garlic bolts were periodical determined.The results showed that 70%O2+30%CO2 treatment has the latest respiratory peak time,the peak of breathing occurs at the latest effectively delayed the decline of hardness,chlorophyll,ascorbic acid and soluble solids,inhibited the increase of L*,a*,b*,weight loss,crude fiber,MDA and relative conductivity,has best storage effect on garlic bolts.The results of the above three temperature studies show that the optimal O2/CO2 proportion is different at different temperatures,and the proportion of CO2 required increases with temperature.4. To investigate the effect of active modified atmospheres packaging on volatile composition of garlic bolts at 25?,the content and species of volatile components in different treatments of garlic bolts were determined using headspace solid phase microextraction and gas chromatography-mass spectrometry.The results showed that the content and species of sulfur compounds were the most species in all treatments,but the species and contents were different.At the end of storage,the content of sulfide in each trearment of garlic bolts was increased,but the 70%O2+30%CO2treatment exhibed the smallest.
