Resistant starch refers to a general term for starch and its degradation products that cannot be digested and absorbed in the human small intestine.With the continuous exploitation of resistant starch,its application in the food industry has received more and more attention.In the preparation process of resistant starch,the conditions of gelatinization temperature,recrystallization temperature,recrystallization time,debranching treatment,and degree of debranching have an important influence on the crystal structure and content of resistant starch.The subject uses high-linear corn starch(amylose content of 70%)as raw material,and is treated by galvanic coupling enzyme method.The effects of autoclave temperature,debranching treatment and recrystallization temperature on the crystal structure and content of resistant starch are studied.The samples with the highest resistant starch content were tested and subjected to in vitro anaerobic fermentation simulation.The research results are as follows:Under different autoclave temperatures and recrystallization temperatures,the resistant starch prepared without debranching treatment has strong diffraction peaks at 13°,170 and 19.9°,belonging to the B+V crystal structure;Under the crystallization temperature condition,with the increase of autoclave temperature,the relative crystallinity of the sample increases,the crystal long-range order increases,the short-range order increases,and the resistant starch content increases.Under the same autoclave temperature,with recrystallization When the temperature increases,the relative crystallinity of the sample increases,the crystal long-range order increases,the short-range order increases,and the resistant starch content increases.Under the tempering temperature of 130?,the recrystallization temperature is 950C,the relative crystallinity of the sample is obtained.The ratio of Fourier infrared 1047/1022 is 0.66,the half width of Raman 480cm-1 is 17.12,and the resistant starch content is 43.17%.Under different autoclave temperatures and recrystallization temperatures,the crystal type of the resistant starch prepared by debranching treatment is still B+V type;under the same recrystallization temperature,the sample is relative with the increase of autoclave temperature.The crystallinity increases,the crystal long-range order increases,the short-range order increases,and the resistant starch content increases.Under the same autoclave temperature,as the recrystallization temperature increases,the relative crystallinity of the sample increases,and the crystal long-range order Increase,short-range order increases,resistant starch content increases;at an autoclave temperature of 130?,recrystallization temperature of 95?,relative crystallinity of 27.1%,Fourier infrared 1047/1022 ratio of 0.80,Raman 480cm The half-peak width at 480cm-1 was 14.50,and the resistant starch content was 71.2%.Compared with the sample without de-branch treatment,the relative crystallinity of the sample after de-branch treatment increased by 12.5%,and the resistant starch content increased by 28.03%.For HA7(high linear corn starch),HA7-E(HA7 for rapid and slow digestion of starch),RS3(pressured at 130?,recrystallization at 95?),RS3-E(removal of fast and slow digestion)Starch RS3),RS3-D(autoclave 130?,enzyme debranching,recrystallization of 95? treated sample),RS3-DE(removal of fast and slow digested starch RS3-D)samples for in vitro anaerobic fermentation simulation.Found that all samples were fermented to increase the content of short-chain fatty acids,RS3-E produced more short-chain fatty acids,followed by RS3-DE,the difference between the two is small,followed by the removal of samples of fast-digested starch and slow-digested starch.Both of them have higher short-chain fatty acid content than the original sample;however,the intestinal microbial angle,the sample for removing the rapidly digested starch and the slow-digested starch is more than the beneficial bacteria of the original starch,and the undissociated is more beneficial than the debranching.
