In recent years,due to the pollution of heavy metals in many parts of the world,more and more attention has been paid to the environmental fate of heavy metals and food residues.Many cities and regions in China have also reported the pollution of heavy metals to food and environment.It can be seen that the problem of heavy metal pollution in diet has been a serious threat to the health of the people.At the same time,with the steady economic development of our country year by year,the quality of life of consumers has been gradually improved,the diet situation has also been gradually diversified,and the average consumption quantity of grain products of Chinese people is also on the rise.However,while bringing convenience to people's lives,we should pay more attention to the quality of food and possible food safety problems.With the increasingly serious pollution of water quality and soil in the environment,the problem of heavy metal pollution inevitably causes its residues in food to exceed the allowable national standards,especially the phenomenon of exceeding the standard of heavy metals in grain products.A variety of heavy metals are very harmful to the human body,affecting the skin,bones,lungs,brain,kidney,liver,metabolic system,cardiovascular system,immune system and endocrine system,leading to the occurrence of a variety of diseases.We should pay enough attention to the adverse consequences of building health for the lives of the masses.This paper takes a number of supermarkets and farmers' markets in four administrative areas of Changchun as sampling sites,selects a variety of different types of cereals as the research object,and collects more than 400 different samples,including baking,cooking and frying.There are more than 100 unprocessed samples each.According to the current effective testing methods stipulated in the national standards,the samples are pretreated by wet method.Then,the contents of lead,cadmium,arsenic and chromium in the samples were tested and determined by atomic absorption instrument,and then the results were analyzed on the basis of national standards.In turn,to understand whether the contents of the four heavy metals will have a negative impact on the physical conditions of the residents,and to evaluate the food risks related to the residents in order to provide a basis for people's daily consumption,which has a certain social and economic significance.The results showed that all the four heavy metals were detected,among which the detection rate of cadmium and arsenic was the highest,the detection rate of lead and chromium was low,and the contents of the four heavy metals also exceeded the standard,among which lead was the most significant.The detection rate of heavy metal residues in grain products in the four districts was more than 10%,and the detection rate of baked and fried samples was higher.From the analysis of individual pollution,these four heavy metals can not have a significant impact on local consumers,but from the aspect of compound pollution,it may affect human health,which should attract our attention and strengthen supervision.
