In recent years,there are food security issues have happened continuously,both internationally and nationally.Flour product is the staple product of people's daily life,In the city of Changchun.Is there food security issues? Where and what flour product to get is safer? It is worthy of researching food security-related issues.Through searching for literature,we found that there are very few researches were done about flour product security on sale in the market in the city of Changchun.Therefore,this study is about flour product security status on sale in the market in the city of Changchun.The result of the research shows that purchased sixteen kinds of food security rapid detection kit of flour products from four retailers all met the related regulatory standards.We have collected 75 examples of flour products from farmer's markets,morning markets,supermarkets,and restaurants to test the content of Sodium formaldehyde sulfoxylate,Borax,Kalium bromate,Benzoyl peroxide,and Alum through rapid detection kit.The test of verification of 75 flour products bought by retailers shows that there is no use of Kalium bromate and Benzoyl peroxide in flour product in the city of Changchun.And,the flour product sold in supermarkets and restaurants were qualified,but only a part of the flour product in farmer's markets and morning markets were qualified.To better explain the food security safety status on sale in the market and to minimize the experimental contingency,this survey collected 745 flour products from the farmer's markets and morning markets in Changchun,using the national standard to verifies the content of Sodium formaldehyde sulfoxylate,Borax,Alum in flour products.The result of the survey shown that the content of Sodium formaldehyde sulfoxylate,Borax,Alum in flour products all passed the standards with an average above 96%.In different flour product,the Sodium formaldehyde sulfoxylate is mainly used in steamed bread,the Borax is mainly used in noodles,and the Alum is mainly used in Youtiao.The study proved that flour products on sale in the market have a passing rate of over 96% in the city of Changchun.We suggest that the government should strengthen surveillance to enhance food security in Changchun.
