3D printing technology,as known as additive manufacturing,achieves the flexible manufacturing of objects through layer stacking.It has been widely used in various fields in recent decades.By applying the 3D printing technology to the production of health care products or medicines,the dosage and shape of the products can realize individualization.The complex polysaccharides extracted from traditional Chinese medicine have the health-care functions including improving immunity,anti-tumor and anti-oxidation.Their commercial formulations are relatively simple and the human compliance is poor.Jelly sweets are widely favored because of their special properties including low calorie,high moisture and unique taste.This research focused on the concept of ?de-pharmaceuticalization?,intending to load the complex polysaccharides which were extracted from traditional Chinese medicine materials into jelly sweets.We replaced the glucose and fructose syrup with sugar alcohol to prepare the jelly sweets.Combining with the concept of individualization,the fused deposition modeling(FDM)3D printing technology was used to print the jelly sweets to have the customized geometry and the certain content of the polysaccharides.Through the screening of different gelling agents and adjusting the formula,the oxidized potato starch mixed with the deacylated gellan were selected as the gelling agents of the jelly sweets without complex polysaccharides.We chose the erythritol and maltol syrup as sweeteners for the matrix,and adjusted the appropriate printing parameters.We could print out the designed jelly sweets successfully.According to the above experimental results,it could be seen that the oxidized potato starch is suitable and has widely applicabilities for the melt-extruded 3D printing.It is a good choice for 3D printing as a gelling agent.The combination of oxidized starch and deacylated gellan can ensure the realization of 3D printing.Through the orthogonal experiment with water loss rate as the index,the optimum formula was obtained as follows: starch 14 g,gellan 0.8 g,erythritol 38 g,maltitol syrup 38 g.The complex polysaccharides were loaded onto the blank jelly matrix.We adjusted the formula for a better printing effect.In the end,agar,gelatin,oxidized starch and deacylated gellan were used as complex gelling agents,erythritol and maltol syrup were used as sweeteners,also neotame and mint powder were used as flavoring agents to prepare the jelly sweets containing complex polysaccharides.The final formulation contained starch 4g,agar 12 g,gelatin 12 g,deacylated gellan 1.2 g,erythritol 44 g,maltitol syrup 50 g,neotame 0.01 g,mint powder 0.15 g,and complex polysaccharides 10 g.The content of soluble solids in the printing materials should be controlled between 70% and 75%,and the content of the complex polysaccharides in the jelly sweets was about 6%.From the results of the rheological analysises,we could find out that the printing materials of the jelly sweets in this study had the properties including the thermal recoverability,shear thinning and shear recovery properties,which could explain the realizability of the 3D printing.Due to the restriction of the 3D printing preparation method,the hardness of the sweets prepared by this subject was generally higher than those of commercial soft sweets,but the sweets were superior in elasticity and chewiness,and the taste could be accepted by most people.The ambient temperature is favorable for the storage of the jelly sweets at 5~25°C,and the optimal storage temperature is 5°C.The morphology and texture of the jelly sweets had not changed significantly after the storage at this temperature for one week.Through the above experiments,this research has obtained the jelly sweets matrix loading with the complex polysaccharides which is suitable for 3D printing.It has good taste and well 3D printing formability.It can realize the rapid prototyping and shape individuation.We preliminarily explored the application of 3D printing in jelly sweets in this study.
