The storage stability of rice is poor,and the storage forms are various,different methods require different management.The main producing and reserve areas of rice in China are located in the south of the subtropical monsoon climate region.There are also a certain scale of rice planting and storage in the temperate monsoon climate region of Northern China,but few related studies.This experiment used rice from different provinces storing in different warehouses,under different storage temperature in Shandong province,by testing it's quality on schedule,to get the law of rice quality change,hopping to find a better way to store rice in Shandong province,even the northern area by analyzing the date.It will be very useful to improve the quality of the temperate zone monsoon climate area of rice storage stability and provide reference for scientific grain storage.During the research,with the prolonging of storage time,the indexes such as the husked rice yield,head rice yield,moisture content,tasting assessment value showed a downtrend,change significantly,Foreign matter,husked rice,colour and odour of rice keeps the same.The storage conditions,temperature and the varieties of rice showed a trend of continuous decline in the storage process.In the comparative study of rice stored in Sushi bin,horizontal warehouse,large size horizontal warehouse,the quality presents downtrend in varying degrees,when the rice was stored in Sushi bin,the quality of rice decline faster than it was stored in horizontal warehouses.The husked rice yield that stored in the high cottage bin decreased by 2.1%,0.7% and 1.6% lower than that stored the horizontal warehouses and Sushi bin respectively.The decrease rate of head rice yield was 3.4%,which was 1.9% and 3.0% lower.The moisture content decreased by 16.3%,which was 5.1% and 8.4% lower.The decline of tasting assessment value was 8.4%,3.4% and 8.3% lower.The increase rate of yellow-coloured rice content was 83.3%,which was 16.7% and 83.4% lower.The increase of fatty acid value was 40.3%,which was 10.5% and 21.9% lower than that stored the horizontal warehouses and Sushi bin respectively.In the comparative study of rice stored indifferent temperatures,the quality of rice stored under different temperature presents downtrend in varying degrees,the descend range is smallest when the rice was stored under quasi-low temperature,then was stored under the highest temperature below 25 degree centigrade,then is the condition using conventional technique of grain storage.In the process of quasi-low temperature storage,the husked rice yield decreased by 2.1%,which was 1.2% and 3.0% lower than that stored under the highest temperature below 25 degree centigrade and the condition using conventional technique of grain storage respectively.The reduction of head rice yield was 2.4%,which was 1.5% and 4.2% lower.The reduction of moisture content was 9.7%,2.9% and 14.4% lower.The reduction of tasting assessment value was 8.2%,2.5% and 8.3% lower.The number of yellow-coloured rice increased by 50%,which was 7.1% and 50.0% lower.The value of fatty acids increased by 30.2%,which was 13.5% and 31.7% lower than that stored under the highest temperature below 25 degree centigrade and the condition using conventional technique of grain storage respectively.The storage stability of rice growed in Liaoning province is better than that in Shandong province and Jiangsu province,and the storage stability of rice growed in Jiangsu province is the worst.The husked rice yield,head rice yield,tasting assessment value,fatty acid value change significantly.The husked rice yield growed in Liaoning province decreased by 2.4%,which was 0.8% lower than that growed in Shandong province and 2.1% lower than growed in Jiangsu province.The reduction of head rice yield was 3.7%,1.1% and 1.5% lower than that of Shandong province and Jiangsu province respectively.The increase of fatty acid value was 11.8%,which was 2.7% and 6.8% lower than that of rice in Shandong province and Jiangsu province respectively.The reduction of tasting assessment value was 6.0%,which was 2.6% and 5.4% lower than that of Shandong and Jiangsu,respectively.In the storage of rice in the north temperate monsoon climate region,factors such as variety of rice,place of origin,moisture content in storage,initial quality and storage period should be considered.In the areas with a high temperature in summer,you should use air conditioner to store rice in horizontal warehouses,at least use one of them,strictly control the moisture content,foreign matter of rice under the safe level.You'd avoid choosing conventional technique of grain storage or Sushi bin to store the rice from Jiangsu.It is useful to use aeration for grain storage in time and kinds of ways to keep a low temperature during rice storage.Then you may delay deterioration of rice and reduce the loss.
