Study On The Quality Analysis And Standardized Production Of Typical Se-enriched Agricultural Products In Meizhou

Selenium(Se)is an essential trace element in the human body.The Chinese Nutrition Society recommends adult dietary selenium intake of 60?g/d.This paper selected several major agricultural products in Meizhou from the selenium-enriched agricultural production area in Meizhou City,Guangdong Province,and determined the selenium content according to the national standard GB 5009.93-2017.The results show that the selenium content of selenium-enriched rice sample in Meizhou was 0.18mg/kg,the selenium content of seleniumenriched black tea sample was 0.055mg/kg,and the selenium content of selenium-enriched green tea sample was 0.14mg/kg.The selenium content of the egg sample was 0.18mg/kg,the selenium content of the egg albumen was 0.057mg/kg,and the selenium content of the egg yolk was 0.52mg/kg.The results of the main nutrients determined showed that the fat content of the seleniumenriched rice sample is(0.83±0.06)g/100 g,the lysine content is(9.91±0.38)?g/mg,the soluble protein content is(0.64±0.04)mg/g,the soluble sugar content is(9.65%±0.24%)and the starch content is(79.74%±1.14%).The free amino acid content,tea polyphenol content,flavonoid content,soluble sugar content and tea pH value of the selenium-enriched black tea sample were respectively 3.29% ±0.29%,13.18%±0.23%,(8.64±0.32)mg/g,1.85%±0.06% and 5.23±0.01.The same indicators of selenium-enriched green tea sample were 2.26%±0.05%,19.57%±0.68%,(9.49±0.49)mg/g,3.52%±0.22%,and 5.82±0.01,respectively.The fat content of the selenium-enriched egg sample is(10.06±0.24)g/100 g,the moisture content is(74.33±1.03)g/100 g,the protein content is(12.10±0.08)g/100 g,and the egg yolk cholesterol content is(1321.08±27.84)mg/100 g,egg yolk lecithin content is 1.08% ±0.07%.The content of soluble sugar in selenium-enriched rice sample is relatively high,which can provide energy for the human body;the selenium-enriched rice sample contains essential amino acids,ie Lysine,and high content,edible selenium-enriched rice 200~300g/d,can provide lysine about 2000~3000mg/d for human body.The content of free amino acids,tea polyphenols and flavonoids in selenium-enriched black tea and selenium-enriched green tea is higher,and has a good quality foundation.Drinking selenium-enriched black tea and selenium-enriched green tea in daily life is an important way for the body to consume amino acids,tea polyphenols and flavonoids.Each selenium-enriched egg yolk can provide about 250 mg of cholesterol.Eat 280~350g of selenium-enriched eggs every week,which can provide about 4~5g/d of fat to the human body,provide water,provide about 5~6g/d of protein,and provide about 0.4~0.5g/d of lecithin.It indicates that selenium-enriched eggs have high nutritional value and low cholesterol content,which is beneficial to human health.According to the soil ecological environment of Meizhou area and the basic rule of scientific selenium-enriched production,several standardized production rules of seleniumenriched agricultural products were drawn up.
