| Teff is a grass crop originating in Ethiopia.It is also known as Ethiopian teff.As a whole grain,teff has attracted people’s attention as the concept and awareness of healthy eating has been strengthened.Based on the whole grain characteristics of teff and the current status of whole grain research,this paper makes a series of preliminary explorations on the functionality of teff.Firstly,a preliminary understanding of the content of teff was carried out by measuring the content of the basic components of teff.In the latest research,26 kinds of flavonoids with flavonoid core structure were identified.Based on this,the ethanol extraction part of teff was optimized with flavonoid as an index,And through the more mature in vitro antioxidant test method to initially explore the antioxidant activity of teff;Through the in vitro simulation of human digestion process,explore the ability of teff to adsorb cholate,and thus initially recognize the lipid-lowering potential of teff.In order to explore the functional activity of teff,the following research was mainly done:1)The basic components of moss bran,protein,ash,crude fat and starch content accounted for 6.92%,2.44%,2.43%,70.04%,respectively;Eight compounds were detected by GC-MS analysis of fatty acids in teff.The results showed that the main saturated fatty acids were stearic acid and palmitic acid,which accounted for 10.27%and15.55%respectively;Unsaturated fatty acids accounted for 65.81%of the total content,mainly linoleic acid and oleic acid,accounting for 41.81%and 20.16%of the total fatty acids,respectively.2)Based on the single factor experiment,the four-factor and three-level Box-Behnken response surface test was used to optimize the extraction of total flavonoids from the teff by using Design-Expert 8.0.6 software.The maximum extraction amount reached 144.0mg/100g.The scavenging capacity of teff to DPPH,ABTS~+·,·OH free radicals and the reducing capacity of iron ions were determined.The results showed that teff had certain antioxidant capacity in vitro.3)Cholate was used as an index to preliminarily explore the lipid-lowering activity of teff in vitro.By measuring the adsorptive capacity of teff to cholate,it was found that with the increase of the amount of teff powder,its ability of adsorbing cholate was continuously strengthened.The results showed that teff had a certain lipid-lowering potential. |
