P.vannamei is delicious,nutritious,rich in protein,essential amino acids,minerals and highly unsaturated fatty acids,and is favored by consumers.Due to the high protein and water content,microorganisms in P.vannamei multiply rapidly,causing spoilage.In the process of spoilage and deterioration of P.dominant spoilage bacteria dominated.A large number of studies have shown that Quorum sensing(QS)can regulate the microbial resistance of P.vannamei This paper aims to analyze the microbial diversity and specific Spoilage Organism(SSO)of P.based on high-throughput sequencing,and adopt Dielectric Barrier Discharge(DBD)low temperature plasma technology(Atmospheric Cold Plasma,ACP),studied the effect of SSO sterilization on SSO and the inhibition of N-acyl homoserine lactone(AHLs),and then examined the regulation of ACP on QS.At the same time,the effects of ACP on the nutrient composition and freshness quality of P.vannamei were explored.The main findings are as follows:1.Using high-throughput sequencing to analyze the microbial diversity in the back muscles and tail muscles of P.vannamei the results are as follows: There are 200 identical Operational Taxonomic Units(OTUs)in the back and tail muscles of P.vannamei throughout the storage period.With the increase of storage time,the classification of bacteria in the back muscle and tail muscle of P.vannamei decreased,the genus of bacteria increased,and the difference of flora characteristics became larger;the number of OTU in the back muscle decreased,OTU in the tail muscle,the quantity increases first and then decreases.And it was confirmed that the two SSOs isolated and purified were Shewanella(bacteria I)and Enterobacter(bacteria II).2.The bactericidal efficiency of bacteria I and bacteria II in P.vannamei was analyzed by analyzing different ACP treatment conditions,and the optimal sterilization conditions were treated at 60 kV for 120 s.The optimal conditions for ACP inhibition of AHLs signaling in bacteria I and bacteria II were 60 kV,120s.The effects of AHLs on bacterium I and bacterium II were further studied.AHLs signaling molecule standards were added to bacterium I and bacterium II.It was found that AHLs signaling molecules could promote the colony growth of bacterium I and bacterium II,in order to explore the signal molecule pairs of AHLs.The impact of the QS system provides a basis.3.The effects of different ACP treatment conditions on the nutrient composition of P.vannamei were investigated.The results showed that ACP treatment had little effect on the nutrient composition of P.and the optimal treatment conditions were 60 kV,120s.The effects of ACP treatment on the physicochemical properties of P.vannamei under these conditions were studied.The results showed that ACP significantly inhibited the volatile base nitrogen content and the total number of colonies of P.and the sensory characteristics of ACP on P.Explain that ACP can delay the spoilage of P.vannamei and extend its shelf life.The research results of this experiment can provide certain reference value for quality control,storage and preservation of P.vannamei and other aquatic products.
