| Alkenyl succinic acid starch ester can be widely used in food additives,pharmaceutical industry,textile industry,and many other fields.Taking cassava starch as raw material,the symplectic alkenyl succinic anhydride and twelve alkenyl succinic anhydride as esterifying agent,using mechanical activation of symplectic alkenyl succinic acid prepared by starch ester and alkenyl succinic acid starch ester twelve.This experiment adopts the single factor arid orthogonal method to determine the optimum process conditions of reaction,and to measure alkenyl succinic acid starch ester transparency,cold water solubility,retrogradation,freeze-thaw stability,viscosity and emulsification etc.Under the condition of optimum process with high temperature and microwave assisted method,preparation of high emulsification starch ester.After on products is conducted by XRD,FT-IR,SEM and so on structure characterization.The experiment conclusions are as follows:(1)According to single factor orthogonal experiments,the optimum process conditions of alkenyl succinic acid starch ester as:Fixed dry starch dosage,8%dosage of alkenyl succinic anhydride,ball mill 90 min of reaction time,reaction temperature 60℃,dosage of additives(sodium carbonate)0.5%(dry basis starch),validated the experiment proves the reaction degree of substitution of 0.0379;Absolute dry starch 50 g,twelve alkenyl succinic anhydride dosage is 10%,ball mill 90 min of reaction time,reaction temperature 50℃,dosage of additives(sodium carbonate)0.5%(dry basis starch),validated the experiment proves the reaction degree of substitution of 0.0349.(2)Diction of mechanical activation method alkenyl succinic acid starch ester product performance test,the results show that,compared with cassava starch of mechanical activation method alkenyl succinic acid starch ester has improved its transparency,cold water solubility enhancement,weaker retrogradation,freeze-thaw stability,viscosity,emulsification strengthen etc,physical and chemical properties change significantly.Starch ester substitution degree and emulsifying performance has improved significantly.Contrast sheen alkenyl succinic acid starch ester OSAS and twelve alkenyl succinic acid starch ester SSAS,with the increase of reaction time,SSAS light transmittance and viscosity of the paste than OSAS,the emulsification is slightly better than that of OSAS also,this is because the DDSA slightly larger than the OSA,the viscosity of mixed with starch is closer to "solid-solid phase",in the process of activation are less likely to agglomerate,the starch ball mill reaction more fully,more serious than the crystalline structure of starch was damaged.(3)using Fourier transform infrared spectrum,X-ray diffraction,electron microscope of mechanical activation method alkenyl succinic acid starch ester products for structural characterization.FT-IR results showed that starch esterification reaction;XRD showed that the mechanical activation effectively destroy the crystalline structure of starch;SEM results indicated that mechanical activation surface of starch have obvious damage.(3)Mechanical activated starch as the raw material.Made by high temperature auxiliary method and microwave assisted method better starch ester emulsion,emulsion stability more stronger.By using Fourier transform infrared spectrum,X-ray difraction ray scanning,electron microscope observation the characterization of the structure,found product crystals were severely damaged,particle morphology became irregular,mechanical activation of small molecules before and after the reunion,a big change in the nature of the starch,starch has to react in the setting area. |
