In this paper,two typical hydroxy-type organic gels-Ethyl cellulose(EC)and 12-hydroxyoctadecanoic acid(12-HSA)were used as the lipid To construct a fat and liquid crystal network to replace trans fatty acids.The main research contents include:gelation performance,oxidation performance of EC,12-HSA in oil and fat,improvement of oxidation detection method,application of two kinds of gels in shortening and storage study.Gels have an important effect on grease gels.The hardness of the oil gel increased with the increase of 12-HSA and EC,and reached 594.76g and 452.06g respectively when the addition amount was 12%.The agglomeration of the oil gel increased with the increase of the amount of the gel The viscosity of 12-HSA and EC was 1%and 6%,respectively.The viscoelasticity of oil gel was the highest,which was 0.30 and 0.49 respectively.The linear viscoelastic area of 12-HSA oil gel was larger than that of EC Gel,the addition amount reached 4%and 6%,respectively,both in the experimental oscillation frequency to form a stable gel state;12-HSA oil gel structure with the increase in the amount of more stable,when the EC addition At 6%to 8%,the oil gel structure is the most stable.The results showed that the addition of EC and 12-HSA had no significant effect on the lipid peroxidation value,which was 1.93mmol/Kg?2.70mmol/Kg,1.95mmol/Kg?2.12mmol/Kg respectively.12-HSA molecules contain hydroxyl groups,in the acid titration can consume alkali,so the oil acid value increases with the addition of gels increased,respectively 0.28mg/g?0.78mg/g,1.97mg/g?14.44mg/g;fenixylamine value increases slowly with the addition of gelling agent.The effect of gelling agent on the oxidation of oil was investigated by the method of headspace gas-phase oxygenation.The experimental results show that the oil gels can keep the structure stable at room temperature(25?).When the addition amount of 12-HSA and EC is 10%and 12%respectively,the headspace in soybean oil,palm oil and palm stear And the residual oxygen content was 19.32%,19.39%,19.62%,18.93%,19.08%and 19.35%respectively.At the high temperature(200 ?),the oil gel melted,12-HSA,The additions increased and decreased by 4.89%?9.58%and 6.11%?9.90%respectively after 6h heating.The results showed that 12-HSA was added in an amount of 6%,the EC viscosity was 50mPa s:100mPa s was 1:2,and the addition of 12-HSA and viscosity EC was carried out in a shortening product having a saturation of 30%When the amount is 6%,the prepared butter has a hardness of 96.89g?98.96 g and does not contain trans fatty acids.EC through the viscosity of the complex can maximize the reduction of gel preparation time and also have good gel properties.The results of storage experiments show that the two kinds of hydroxylated oil gels in the 25 ? and 5 ? storage temperature oxidation index in the normal range,to maintain good quality.
