Ginseng as five Plus ginseng genus,Panax perennial herbaceous plants,is our traditional valuable Chinese herbal medicine,has a long medicinal history,one of the northeast is the"three treasures".Ginseng saponin for ginseng is the main active ingredient,ginseng also contain polysaccharide,amino acids,flavonoids,fatty acid,volatile oil,vitamin and copper,zinc,iron,manganese,more than twenty kinds of trace elements.Ginseng can adjust nervous system function,improve digestion and absorption and metabolism function,anti-aging,antitumor,enhance immunity,etc.Ginseng is also important to the new resources of food raw materials,since ancient times has a history of eating.Taking ginseng as raw material,through lactic acid bacteria fermentation,developed with ginseng special aromatic and nutritional value ginseng lactic acid fermentation beverage.Mainly to the ginseng of the leaching solution preparation,lactic acid bacteria,domestication and optimization,ginseng lactic acid fermentation conditions of the screening,ginseng lactic acid fermentation drink formula and the stability test research,get test results are as follows:1.In order to ginsenoside content as evaluation indexes,through the orthogonal test to determine the ginseng extraction optimum process conditions for:the ratio of material to water for 1:30,leaching temperature for 80 ?,leaching time for 100 min.2.Gradually enhances the raise centralism ginseng juice density,compound gradient domestication to lactobacillus,in order to adapt to the original ginseng juice and obtain the biggest quanity of lactobacillus,after the domestication,the experiment testifies that the optimum condition for the bacteria to grow and manifold:ginseng juice 50%,Content of reconstituted skim milk is 50%,cultured temperature 42?,cultured time 6 hours and inoculation 4%.3.Domesticated strains of access containing milk powder of ginseng juice fermentation,filter out the of ginseng lactic acid fermented beverages optimal fermentation conditions:he amount of milk is 6%,the temperature of fermentation is 42 ?,the amount of inoculation is 4%,the time of fermentation is 6 hours.4.The best compounding of the ginseng lactic fermentation beverage:the concentration of fermentation juice is 25%,the total sugar content is 8%,total acid content is 0.28%.5.The best compounding of stabilizer about the ginseng lactic fermentation beverage:AGAR 0.08%,carboxymethyl cellulose 0.10%,gelatin 0,10%.
