Research On Aroma Of Blueberry And Processing Of Fruit Juice

In this paper,the aroma components of blueberry cultivars and their fruit and peel parts were studied based on blueberries from Hubei’s Suizhou Pulan High-tech base,and two blueberry juice beverages were developed,and a fruit juice production line was established.1.The aromatic compositions were analyzed by headspace solid-phase micro-extraction(HS-SPME)coupled to gas chromatography-mass spectrometry(GC-MS).The main aroma components of Misty pulp were linalool(36.3754%),α-terpineol(7.8945%),in the pericarp of linalool(13.2597%),d-limonene(11.7571%);The main aroma components of Brigitta pulp were linalool(33.1327%),α-terpineol(9.2022%),eudesmol(6.171%),in the pericarp of linalool(10.7441%),nonanal(9.0008%),6-methyl-5-hepten-2-one(5.754%),.The common aroma components with high relative content of Brigitta,Northland,Bluecrop,O’neal,Misty were linalool and α-terpineol.2.The results of relative odor activity value(ROAV)showed the key flavor compounds of the whole fruit of Brigitta were damascenone,linalool,trans-2-nonenal,of Misty were damascenone,linalool,of Northland were linalool,decanal,of Bluecrop were linalool eudesmol,of O’neal were damascenone,linalool,trans-2-hexenal.The ordor of odor intensity in 5 blueberry cultivars was: Misty > Brigitta > O’neal > Northland > Bluecrop.3.Two fresh 100% blueberry fruit juice products were developed in this study.The 8 clarification processes were used in clear blueberry juice,and the 4 emulsification processes were used in cloudy blueberry juice.The maximum preservation of fruit juice nutrition with typical blueberry blue purple colour,fragrant grass,sweet and sour moderate of blueberry astringency by ultra high temperature instant sterilization.4.A complete automatic production line of clear and cloudy blueberry juice with 200kg/batch was found in this study,which contained 7 pretreatment equipments,6 clearing system equipments,6 emulsifying system equipments,5 sterilization and filling system equipments,4 CIP automatic cleaning system equipments,4 auxiliary equipments.The production line not only can continuous production,but also make use of a single device for scientific experiments with the characteristics of simplified equipment,clear process route,perfect pipeline setting and convenient using.
