In recent years,cigarette flavouring has become one of the hot issues in the tobacco research.This paper developed a new kind of small cluster water,which has a better ability to convey flavouring substances,to improve the taste of the tabocco.In this paper,pyrolysis gas chromatography mass spectrometry,aroma components of detection and liquid chromatography mass spectrometry were used to evaluate the properties of this small cluster water.First of all,small cluster water sample was prepared by program control freezing method and compared its properites with water sample collected in Yunnanand pure water sample purchased in Tianjin by electrical conductivity test,acidity,liquid nuclear magnetic resonance and laser Raman spectroscopy.The results showed that own-made water sample is weak alkaline,and its conductivity is 32.3?s/cm.Compared with control samples,own-made water sample exhibited the lowest 17O half peak width of nuclear magnetic?49.5 Hz?and highest degree of without hydrogen bonding which was 34.18%among three samples.The above characterizations proved that small cluster water was obtained by program control freezing method.Secondly,in order to explore the mechanism of the combination of tobacco and phenylalanine,3 different adsorption kinetics models were used to fit the process of phenylalanineadsorption.Theresultsshowedthat,comparedwiththe pseudo-first-order kinetics model,the adsorption capacity?1.398 mg/g?that calculated from pseudo-second-order kinetics model was closer to the actual measured values in the process of adsorption?1.375 mg/g?,and its correlation coefficient reached to0.9871.Meanwhile,we also use the Fourier infrared spectroscopy confirmed the combination of tobacco and phenylalanine.Finally,the practical process of the adding solution was simulated into tobacco,and then tested the tobacco slice.It confirmed that phenylalanine was infiltrated to the spongy parenchyma near the leaf lower epidermis by own-made water sample.Compared with control groups,the tobacco dealed with appropriate amino acids by own-made water sample had better taste and fragrance,and liquid chromatography mass spectrometry instrument test results showed that its content of phenylalanine reached 99.26?g/g.Also,pyrolysis gas chromatography-mass spectrometry data results showed that the content of maillard products of tobacco spraying with own-made water sample were the highest,which were 30.65%?10.03%?9.21%under300,600 and 900?,respectively.As for aroma component detection,the composition of aldehydes,hydrocarbons of tobacco with amino acids were higher than control groups,and the ketones,alcohols,esters changed little.In this paper,the program control freezing method was used to prepare small cluster water and researched the mechanism of the combination of tobacco and phenylalanine.And then the tobacco quality with different modifications was studied from multiple perspectives,which can provide a scientific basis for improving the quality of tobacco,and expand the ways of thinking on solving the problems.
