Multielement alditol is widely used in food,medicine,chemical industry and other industries due to its sweetness,low energy,anti-dental caries,and good moisture retention.The application of it in the liquor industry started late,but as the development of liquor industry,people the more aware of the importance of multielement alditol for the sweetness and mellowness of liquors.However,with the development of the liquor industry,investigatos are increasingly aware of the importance of multielement alditol for the mellowness of liquor and have carried out related research.However,there is less research on multielement alditol in liquor brewing process.The content of multielement alditol is generally low according to corresbonding report,especially in liquor.Therefore,how to effectively enrich multielement alditol in liquor has become a research hotspot in this field.In this paper,Trichosporon coremiiforme FBKL 2.0310,which is the most abundant multielement alditol-producing strain in laboratory,was selected as the starting strain.The growth characteristics and liquid fermentation characteristics of the strain were explored through liquid fermentation,and the high-yield fermentation process was obtained.The process,as a reference,studied the solid-state fermentation process,and obtained the limiting factors for the production of multielement alditol by solid-state fermentation of the bacteria.At the same time,it investigated the circumstance of different raw materials to produce multielement alditol and used different alcohol concentrations for extraction.All researches provided reference data to adjustment fermentation process to improve the liquor quality of the liquor targetedly.The main results are as follows:1.Optimized by single-factor experiments and verified by repeated test that the optimal fermentation process for producing multielement alditol by liquid fermentation of the strain is as follows: 18 hour of seed age,the best medium composition is 200g/L glucose,7g/L beef extract,3g/ L corn steep,0.4 g/L potassiumsulphate;optimum fermentation conditions were 6% inoculation,30 m L/250 m L broth volume,fermentation temperature 34?,and initial p H of the culture medium5.5.The highest total multielement alditol yield was 30.53 mg/m L,which was 3.27 times that of the screening.2.Under the optimal fermentation process,batch fermentation experiments were conducted to explore the dynamic changes of cell growth,metabolism and fermentation environment parameters throughout the fermentation process,and the growth curve,substrate consumption curve and product synthesis curve of the strain were obtained.The strain grew rapidly in the fermenter and reached a stable phase within 24 hours.The substrate concentration continued to decrease with the growth of the strain and the synthesis of the product.,the final concentration was below 10g/L.The product D-arabinol synthesis rate was geting slower and slower while the synthesis rate of sorbitol remained increasing.Xylitol appeared to increase first and then decrease.In general,the total amount of multielement alditol in the fermenter has been increasing.3.The single-factor test method was used to inspect the inoculum volume,culture temperature,initial water content of the culture medium and the initial acidity of the culture medium in the solid state fermentation conditions.The optimized process was: inoculation amount 2%,culture temperature 37?,and the initial water content of culture medium was 50% and the initial acidity of the culture medium was0.5.The total amount of the multielement alditol obtained under the solid state fermentation conditions was up to 7.73 mg/g.4.The differences in the production of multielement alditol from solid fermentation of different raw materials was researched.It was found that black glutinous rice can be used as a single raw material and 11.53 mg/g of sugar alcohols can be obtained by solid state fermentation.5.The samples obtained by solid fermentation of sorghum were extracted with different concentrations of alcohol and the total amount of the multielement alditol in the obtained extract was 5.4 mg/m L.
