In this paper,Octenyl Succinic An-hydride Modified Starch(OSA starch)was selected as research object.The microstructure and physicochemical properties were measured.Also,the influence of homogenization conditions on the particle size of water-oil emulsified system was studied.And three-element phase diagram of OSA starch,water and soybean oil was established in order to stabilize the emulsion system.Then,ginger oleoresin was microencapsulated by using OSA starch as wall-material.And the structure and characterization of the microcapsule powder were investigated.Based on the above research,a simple efficacy evaluation and safety test were carried out for the emulsion constructed by OSA starch and skin care products containing microcapsules.The contents and results of the research were as follows:1.The physicochemical properties and microstructure of OSA starch were measured.The result indicated that:OSA starch no longer had a complete starch structure,which broken into fragments,and the polarized cross disappeared.The starch could effectively reduce the surface tension,and had good emulsifying capacity and emulsion stability.The viscosity of OSA starch paste changed little with the temperature,and the viscosity and transparency of starch paste at different concentrations were different,and the rheological model changed.2.The effects of different temperature,time,speed and pH on the particle size of the water-oil emulsification system prepared by OSA starch were measured.The temperature range was2070℃,the time range was 19min,the speed range was 800024000r/min,the pH range was 3.010.0,and the orthogonal experiment was further carried out.The results showed that the homogenization conditions of the emulsion with small particle size and good dispersion were as follows:homogenization time 7min,homogenization temperature 30℃,pH4.0,homogeneous speed 24000r/min,and the average particle size of the emulsion obtained was6.06μm.The effect of pH on the particle size of the emulsion was significant,and the acid condition was helpful to prepare the smaller and more stable emulsion.The three element phase diagram concept was further introduced,and the three element quality ratio relationship of OSA starch,water and oil was studied by using the particle size analysis and microscopic observation as indexes.When d0.9 of the emulsion was less than 10μm,its appearance was white and uniform.And its shape was fine and particles size was uniform.The three element mass ratio zone of the stable emulsion was constructed by connecting the mass ratio points at room temperature for 30d non stratification with a smooth curve.3.Using OSA starch as wall-material and Ginger oleoresin as core-material,Ginger oleoresin microcapsule was prepared by spray drying.And the microcapsule powder were characterized.The results showed that the absorptions peaks of microcapsule products appear in 2855cm-1 which was the characteristic absorption peak of Ginger oleoresin.Based on this,the formation of Ginger oleoresin microcapsule could be judged preliminarily.The results of electron microscopy showed that the microcapsules had certain adhesion,but the particle size of microcapsules was mostly less than 10μm.The influence of temperature and light on the encapsulation stability of microcapsules was studied by taking gingerol content as index.After15d’s temperature and UV stability test,the results showed that the residue of total gingerol in the microcapsule was much higher than that in the mixture,especially at high temperature.So microcapsules can tolerated high temperature and strong light,and reduced the loss of Ginger oleoresin in storage and in use.4.The moisture content and whitening of the emulsion prepared by OSA starch were evaluated.The results showed that the emulsion had a certain moisture retention,but the whitening effect wasn’t obvious;then,based on a mature skin care products,the product added microcapsule powder and added ginger oleoresin were made.These three samples had been measured there efficacy,such as moisturizing,whitening and texture test.The study found that three products had good moisturizing and whitening effect,texture was slightly different;For the skin care product with microcapsule or ginger oleoresin,patch test was carried out in order to evaluation the irritation and safety of two products.The results showed that the skin care product with ginger oleoresin can cause allergic reactions(8/30),but the product with microcapsule had passed the body patch test and did not cause any adverse reactions.
