Content: Ginger is one of the commonly used vegetables in daily life. With rich nutrition and health care function, ginger could be stored for a long time and supplied all year round.Ginger and its products are exported to Europe,America,Japan,Taiwan and other countries. In the process of planting and storing ginger,it is necessary to use pesticides to control pests and diseases, and the pesticide residue problem is of particular concern at home and abroad. Therefore,a comprehensive understanding of pesticide residues in ginger relies on the high flux, high accuracy, high sensitivity detection method. The sample substrates of ginger are quite complex and it causes problems in pretreatment. In recent years,QuEChERS method has received wide attention and application due to its high extraction efficiency and the ability to target different sample substrates.According to the requirements of GB 2763-2016 for pesticide residues in ginger and the detection of pesticide residues in ginger,MRM conditions of GC-MS /MS and LC-MS/MS in 88 pesticide projects were studied, the extraction efficiency of 88 pesticide residues in ginger was compared by using QuEChERS extraction method and QuEChERS extraction method plus toluene and national standard extraction method, the ratio of three dispersants(GCB,PSA and C18)was optimized, and a study on the the effects of sample substrates and a methodological evaluation of the established detection method as well as the pesticide residue of the collected 91 pieces of ginger and their products was conducted. The main research results of this paper are as follows:1、The MRM parameters of LC-MS/MS of 88 pesticide residues were established by selecting the Precursor Ions,Product Ions and collision energy of 88 pesticides. The extraction efficiency of 88 pesticide residues in ginger was compared by using QuEChERS extraction method and QuEChERS extraction method plus 1mL toluene and national standard extraction method, the results show that the extraction efficiency of QuEChERS extraction method is better than that of the other two extraction methods,QuEChERS extraction method: acetic acid + acetonitrile(volume ratio: 1+99)and 1 g of anhydrous sodium acetate for homogeneous extraction followed by the addition of anhydrous magnesium sulfate.Through statistical analysis, the best way to purify the ginger substance was established: Adding 200 mg of C18,500 mg PSA,40 mg GCB and 750 mg of anhydrous magnesium sulfate to the 8mL extract can make the recovery rate of 88 pesticides between 60% and 120%.2、The substance effects of ginger, sugar ginger, and salt ginger were investigated. It was concluded that the substance effects of the three samples were not the same, and that different substance linear calibrations were required to improve the accuracy of sample quantification. The established methods were evaluated methodologically. The recovery rate of 88 pesticides was between 60.2% and 120.0%.The laboratory RSD was between 1.2% and 18.2%,the linear relationship was greater than 0.99,Detection limit is 0.000005 ~ 0.001124 mg/kg,quantitative limit of 0.00018 ~ 0.003745 mg/kg,detection limit is lower than the national standard method(Flusilazole 、 Anilazine 、 Propargite 、Furathiocarbin a national standard, there is no similar matrix and literature method than the way).3、91 samples of ginger and its products were inspected.Pesticide residues were detected in 8 samples.Organic ginger and common ginger products did not show pesticide residues. All of the exported ginger products,semi-finished ginger products and common gingers had a certain degree of pesticide residue.Among the detected pesticide residues, except the maximum residue limit established in GB 2763-2016 for chlorantraniliprole, the maximum residue limit of fenazaquin, buprofezin, difenoconazole, chlorpyrifos, and metalaxyl were not formulated for ginger and its products. This test can provide valid data for the revision of national standards such as GB 2763 and for the formulation of national sampling plan for food safety, and at the same time control the export of ginger and its products to improve the quality of exported products.
