Bread Ultrasonic Cutting Device And Experimental Research

Bread is becoming more and more popular because of its convenience and high nutritional value,and the quality of bread cutting is getting more and more attention.The traditional bread cutting method has poor cutting effect and a large amount of food waste and tool life loss during cutting.Aiming at the above problems,a test bench is designed and manufactured in this paper,and a large number of ultrasonic bread cutting experiments are carried out on the experimental bench.The effects of ultrasonic bread cutting parameters on the cutting effect are studied,and the reference is provided for the ultrasonic cutting of bread.The research contents and achievements of this paper are as follows:(1)Design and manufacture of bread ultrasonic cutting acoustic system.The initial size of the horn was designed by theoretical analysis method.The ANSYS environment was used to optimize and analyze the initial design horn.Finally,the ultrasonic horn with stable shape and easy installation was designed.Based on the vibration theory of compound horn,a wide-blade ultrasonic bread cutter was designed.By cutting a strip groove in the tool to restrain the lateral vibration of the cutter,the cutting tool was modeled in the ANSYS environment to design a stable cutting edge mode Moderation uniform ultrasonic bread food cutting tool.Finally,according to the working properties of ultrasonic horn and cutting tool,select the appropriate material and manufacture the ultrasonic bread cutting acoustic system.(2)Design and manufacture of test benches that can be used for bread ultrasonic cutting.According to the needs of ultrasonic bread cutting,the experimental bench is divided into: support part,transmission part and experimental data collection and analysis part and so on.Choose the right material to design and manufacture the support and transmission parts.According to the purpose of experiment choose the appropriate data collection device and data calculation and analysis software.Finally,the experimental bench is set up.The experimental bench can realize the ultrasonic bread cutting experiment and data collection of the ultrasonic cutting tool within a certain speed and angle range.(3)a lot of bread cutting experiments and data analysis.The ultrasonic bread cutting effect is verified by the ultrasonic cutting technique.A large number of ultrasonic bread food cutting experiments were carried out to study the influence of ultrasonic cutting speed and cutting angle on the breaking force and extension time of bread cutting.The data were processed by data analysis software to analyze the optimum cutting parameters of cutting bread.The experimental results show that ultrasonic bread cutting can effectively solve the problems brought by traditional bread cutting.The bread cutting parameters studied in this paper can alsoprovide reference for the choice of ultrasonic cutting bread cutting parameters.
