This study used Carya Cathayensis Sarg as material to study the process of enzymatic hyd rolysis and the influence on quality of oil.The influences of enzyme type,enzymolysis time,e nzymolysis temperature and enzymolysis p H on the extraction rate of Carya Cathayensis Sarg k ernel free oil yield were investigated by single factor experiment,and the extraction conditions were optimized by response surface design method.On this basis,the influence of different ext raction methods(aqueous enzymatic extraction,soxhlet extraction,spiral squeezing extraction,an d hydraulic oil extraction)on oil quality was compared.1.The oil content of Carya Cathayensis Sarg was 67.49%.It contained eight fatty acids an d total unsaturated fatty acids contained 93.05%.Oleic acid content accounted for 66.78% was the highest.The content of phenolic acids,squalene,VE and sitosterol were 9.55?g/g,0.226 ?g/g,0.387?g/g and 0.767?g/g respectively.2.The influences of different enzymes and two enzyme complexes on oil yield were investi gated.The result showed that oil extraction rate of amylase was the highest,followed by cellul ase2(c1184),hemicellulase,cellulase1(c1794)and protease.And the highest oil extraction rate of compound enzyme was cellulase1(c1794)and hemicellulase.3.With amylase enzyme as the single enzyme,the oil-extracting yield as evaluation,single-f actor test and response surface design method were carried out to investigate the oil-extracting yield at different levels on of different enzyme dose,extraction pH,extraction time and extracti on temperature.The optimum conditions were found as follows: dosage of the enzyme was 0.86%,pH value 6.5,hydrolysis time 29.8h and hydrolysis temperature 19.6?.The verification tes t showed that the oil yield can reach 56.98% at the optimum conditions.4.The quality of oil from different extraction methods(aqueous enzymatic extraction,soxhlet extraction,spiral squeezing extraction,and hydraulic oil extraction)were compared.The results showed that: different methods of extracting oil effect on fatty acid content was not significant.Six phenolic acids were detected,including4-hydroxybenzoic acid etc.The highest total phenol content was soxhlet extraction method.VE content of aqueous enzymatic extraction was the ta llest.Squalene content of soxhlet extraction was the tallest.Sitosterol content of soxhlet extracti on was the highest.Acid value and acid peroxide of four methods were at a low level.
