| Packaging is an important basis for ensuring food quality and safety,and the performance of packaging materials affects the storage,transportation,use and shelf life of foods directly.In recent years,with the continuous improvement of food quality and safety requirements,the demand for multi-functional and environment-friendly composite packaging materials has increased.For oil-based foods,packaging materials need to have antibacterial property in addition to basic barrier properties.Therefore,the development of functional paper packaging materials that combine both antibacterial properties and oil proof has important value in engineering industry.This article used chitosan and starch,which were safe and non-toxic natural raw materials,as the base to formulate an antibacterial and oil proof base fluid.Simultaneously,cinnamaldehyde was used as the core material andβ-cyclodextrin was used as the wall material to prepare cinnamaldehyde-β-cyclodextrin microcapsules.The base liquid and the microcapsules are blended to prepare an anti-bacterial and oil-proof agent.The kraft paper was used as a base material,and the antibacterial and oil-proof wrapping paper is prepared by coating.The preparation process of the functional wrapping paper and the ratio of raw materials were studied,and the performance of the coated paper was analyzed.The main research contents and research results are as follows:(1)The effect of the ratio of cinnamaldehyde andβ-cyclodextrin on the index of cinnamaldehydeβ-cyclodextrin microcapsules was studied.The preparation process and parameters were determined,and the thermal stability and sustained release properties were studied.The results showed that when the molar ratio ofβ-cyclodextrin to cinnamaldehyde was 1:1,the yield and embedding rate of microcapsules were both high,reaching 80.81%and54.13%respectively,and the oil content was 6.98%.The thermal stability of cinnamaldehyde after embedding is greatly improved,and the microcapsules have good storage effect in vacuum drying environment.(2)Chitosan and starch were used as antibacterial and oil-proof base fluids,and homemade cinnamaldehyde-β-cyclodextrin microcapsules were used as sustained-release antibacterial agents.Glycerol and glutaraldehyde were added as additives to prepare antibacterial and anti-oil agents.Applied to kraft paper is antibacterial and oil proof paper.The influence of base fluid formulation,additive amount,preparation process parameters,etc.on the properties of the coated paper was studied.To ensure that the coated paper has good oil and antibacterial properties,the following parameters are determined:Antibacterial and oil proof base solution is composed of 1%chitosan solution(w/v)and 10%starch solution(w/v)The volume ratio of 1:2,glutaraldehyde and glycerol were 0.6%and 0.4%,respectively,and the water bath crosslinking temperature and time were 50°C and 30min,respectively.The wet weight of coating amount was set to 6 g/m~2,and the drying temperature and time were 70°C and 150s,respectively.The oil-resistant grade of coated paper can reach grade 6;when the amount of microcapsules is 3%,the antibacterial rate to Escherichia coli and Staphylococcus aureus can reach 70.60%and 73.15%respectively.(3)The test measures the migration of cinnamaldehyde in coated paper in different food simulants.The simulants were set as 10%aqueous ethanol,60%aqueous glycerol,n-hexane,and 95%aqueous ethanol.The results showed that the release rate and release rate of cinnamaldehyde in the coated paper were higher in the simulated liquid with a certain water activity,and it was slower in the pure oily food.At the same time,based on the experimental data,the migration model was established and the parameters were characterized.The migration model of cinnamaldehyde in different simulated liquids was obtained.The corresponding parameters such as diffusion coefficient and distribution coefficient were calculated.(4)A variety of test instruments were used to test and analyze the coating liquid and the antibacterial and oil-proof paper.The study showed that the solution was well-blended,and the addition of the auxiliaries increased the particle size.By SEM observation,it was found that the surface structure of the composite coated paper was greatly improved compared to the base paper and the single component coated paper.The coating liquid prepared from each raw material has good bonding properties with paper.After being coated with anti-bacterial and oil-proof agents,the moisture resistance and various mechanical properties of the paper have been greatly improved and improved. |
