Prefabricated diced chicken is one of the pre-conditioned meat products.It is convenient to eat,has high nutritional value and has a promising market prospect.In this paper,fresh chicken breast as raw material,to optimize the formula of prefabricated diced chicken,and preservative,ModifiedAtmosphere packaging on the preservation effect of prefabricated diced chicken and low temperature plasma of prefabricated fresh diced chicken.The main findings are as follows:?1?Through the inspection of the total number of fresh chicken breast-like colonies purchased through different channels,the results are as follows:cold-cold chicken breasts in meat-linked plants,cold-fresh chicken breasts in supermarkets,and cold-fresh chicken breasts in farmers'markets.Through orthogonal test,the optimal formula for prefabricated chicken was determined as follows:salt 2%,cooking wine 2%,starch 8%,allspice 2%,monosodium glutamate 0.5%,soy sauce,onion,ginger,garlic,etc.Calculated by percentage of meat weight.?2?The single-factor,orthogonal test showed that the preservative had a preservative effect on prefabricated diced chicken:sodium lactate>Nisin>natamycin>tea polyphenols.The optimal compounding ratios were:Nisin 0.05%,sodium lactate 4.0%,tea polyphenols 0.02%,and natamycin0.01%.The shelf life of prefabricated chickens treated with compound preservatives at 4°C can reach15d,indicating that the composite preservatives can significantly prolong the shelf life of prefabricated chickens.?3?When the storage conditions are the same,compare the four packaging materials of EVOH/PE coextruded film,PVDC/PE coextruded film,PA/PE coextruded film and imported composite film,and then perform the modified atmosphere packaging on the prefabricated Fresh chicken gas ratio optimization.The analysis shows that the prefabricated chickens with EVOH/PE co-extruded film packaging material and 40%CO2+60%N2 gas ratio have the best preservation effect,and the shelf life can reach 18 days.?4?The single factor and response surface results showed that the optimum parameters of low-temperature plasma sterilization for prefabricated chicken were as follows:voltage 1500V,discharge time 52.3s,sterilizing gas argon,gas flow rate 25.27L/min,expected sterilization rate 99.38%.After optimization,the surface sterilization of prefabricated chicken has a good effect.
