Anthocidaris crassispina has high nutritional value in the gonads,which is rich in fat,protein,mineral and rich in amino acids.In this study,the sea urchin was used as a raw material,and on the basis of a full understanding of its edible and nutritional value,the preparation process of purple sea urchin butter microcapsules was studied,and product evaluation of purple sea urchin bile butter microcapsules was conducted.The storage stability of purple sea urchin butter microcapsules was explored as well,providing a theoretical basis for the industrialized production of purple sea urchin butter microcapsules.The specific research contents are as follows:1.The water,crude ash,crude protein,crude fat,total sugar,amino acids,fatty acids,and minerals in the purple sea eichhorn were tested using national standard biochemical assays and American Chemical Analysis Methods(AOAC).The results showed that the water content in purple sea urchin yellow powder was(5.29 ±0.02)%,crude ash was(8.69± 0.03)%,crude protein was(60.36 ± 0.04)%,crude fat was(25.32 ±0.09)%,total sugar content was(0.044 ± 0.002))mg/100 g;18 kinds of amino acids were detected,the total content was(46.50±0.89)%,the most predominant amino acid was glutamic acid(5.57±0.11)%,the essential amino acids were(37.75±0.01)%of total amino acids.The main limiting amino acid was tryptophan and leucine,medicinal qualities of amino acids accounted for 46.86%of total amino acids,the AAS>0.8,the CS>0.5,essential amino acid index EAAI was 77.86;30 kinds of fatty acids were found in sea urchin gonad,the content of EPA and DHA was(2.43±0.05)%;The mineral elements were rich in it,such as K,P,Na,Mg,Fe,Zn,etc.The major elements was P of(1432.27±8.91)mg/100gand the major trace elements was Zn of(13.13±0.09)mg/100g.Studies have shown that purple sea urchin has rich protein content,many types of amino acids,reasonable ratios,high lipid content and rich in polyunsaturated fatty acids such as EPA and DHA,and has rich mineral content.2.Based on the results of single-factor tests,the optimal preparation process of microencapsulation of purple sea urchin was obtained by orthogonal test.The results showed that the optimum conditions of Anthocidaris crassispina gonad oil micro-encapsulation were:the ratio of HI-CAP100 and(3-cyclodextrin was 4:2,solids content 17%,the ratio of oil accounts for wall material 15%.After being emuldified with IKA homogenizer for 30min and homogenizing with a cooking machine for 5 min,the inlet air temperature of spray dryer 180?,outlet air temperature 80 ?,and the sampling rate of 500mL/h,under which,embedding rate of 95.7%,emulsion stability of 96.8%were obtained.3.Detected the physicochemical properties,and hygiene indicators,the internal structure and surface structure of Anthocidaris crassispina gonad oil microcapsule were observed by scanning electron microscope.The results showed that,The Anthocidaris crassispina gonad oil microcapsule in the moisture content was 71.94%,the solubility was71.94%,the gravity angle was 22.05°,the total number of colonies was 480 CFU/g,the number of coliforms was less than 30 MPN/100g,mold and yeast were less than 10 CFU/g,Salmonella,Shigella,Staphylococcus aureus were not detected;the surface ofAnthocidaris crassispina gonad oil microcapsule was smooth and without obvious cracks and bubbles,and the inner structure was firm,the wall thickness was uniform,fine,free of bubbles and pores,and the embedding effect was good.The physicochemical properties and safety and hygiene indicators of Anthocidaris crassispina gonad oil microcapsules are in line with industry standards,and its surface and internal structure is good.4.The volatile odor composition of Anthocidaris crassispina gonad oil microcapsule was detected by electronic nose.Through Schaal oven storage method add microcapsules with Anthocidaris crassispina gonad oil and 0.02%butylated hydroxytoluene Anthocidaris crassispina gonad oil are compared,and storage stability and respectively to light,temperature,oxygen and other storage conditions were studied.The results showed that Anthocidaris crassispina gonad oil microcapsules in the 60±1? under the condition of storage eight days,electronic nose detection showed its volatile odor composition change is not obvious;The storage stability of the Anthocidaris crassispina gonad oil microcapsule is better than that of adding 0.02%butylated hydroxytoluene Anthocidaris crassispina gonad oil and Anthocidaris crassispina gonad oil,and storage environment factors such as temperature,light,oxygen,to a certain extent will promote the oxidation of the purple sea urchin butter microcapsules,but does not change significantly the peroxide value,after the instructions will be purple sea urchin butter microcapsule has good storage stability,not easily influenced by temperature,light,oxygen,but in the conditions allow,or should be under the environment of low temperature,avoid light,vacuum to save.
