The Huainan tofu has been over 2,000 years.With the long cultural heritage,it is a precious cultural heritage of the five thousands years of Chinese civilization.Huainan tofu in 2014 was successfully selected as a national list of non-material cultural heritage,indicating that the inheritance and development of tofu culture in the Bagong Mountain of Huainan is an unprecedented improvement.The making skills and industrial development have gone through the development process from the original ecological tradition to semi-mechanized semi-manual production to the modern machinery production.The first part mainly reviews the historical development of Huainan tofu.According to the historical records of relevant documents,this paper discusses the most convincing point that tofu originated in the Han Dynasty,and it has been for over 2,000 years.Second,this thesis traces the origin of Huainan tofu to the history of the development of the main line,from its historical origins to the folk inheritance to world-famous historical evolution process,and to explore the development of the modern Huainan tofu and clarify its inheritance.In the second part,through the field investigation,we can get a detailed understanding of the twelve technological processes of the traditional making skills of Huainan tofu.Through the comparison of the five processes of Han Dynasty,and the six processes of Tang and Song Dynasties,to analyze the development of the various stages and the uniqueness of the historical accumulation.The third part,discussion on the contemporary development of Huainan tofu.This part collates the industry history of Huainan tofu and explores the use of tofu cultural value.As a national non-material cultural heritage,Huainan tofu has its own unique properties,its technological and cultural value,which makes a win-win for the traditional making skills and economic development in the process of catering to the market.On this basis,combined with the essence of the “ five development concepts ”,we think deeply that how to better maximize the development of Huainan tofu industry under the guidance of“ innovation,coordination,green development,opening up and sharing ” development concepts.
