The strain S3,S7,S8,S44 has been proved to degrade chalaza,but the chalaza-degrading activity was detected only in the culture of strain S8.Sialic acid could be produced from chalaza in which sugar and protein can be detected.Chalaza-degrading enzyme was characterized and the optimal condition for chalaza degradation was investigated and discussed in the paper.The Sialic acid production from chalaza was examined and the results showed that the better process is the chalaza was degraded by the supernatant of strain S8,following the hydrolysis by cell pellet,in which the chalaza can be liquefying after hydrolysis for 60 h.
