The strain XT 11 produces Xanthan-liquefying Enzyme that can degrade xanthan to oligosaccharide.The Xanthan-liquefying Enzyme was characterized after partial purification.The optimum reaction temperature is 40℃,the optimum reaction pH is 6.0.And the Km,is 1.68,the Vmax is 20.37.The sensitivity of the enzyme to the temperature and the pH was examined.When the enzyme is kept at 30℃ for 3h,the activity of the enzyme will be destroyed.And when it is put in the 40℃ for 5min,the activity will be destroyed.Xanthan-liquefying Enzyme was purified by DEAE-Sephadex A25 and CM-Cellulose22.And the result was identified through SDS-PAGE.
