Effects Of Lactobacillus Plantarum WW And Fermentation Products On The Physique Of High Fat Diet Rats

In this paper,Lactobacillus plantarum WW with high cholesterol-lowering activity selected in vitro from natural fermented soybean paste in northeast is selected as the research object.Animal experiments were conducted to verify the cholesterol-lowering effect of the strain and its fermented products in vivo.Provided beneficial strains and theoretical basis for further research and development of cholesterol-lowering products.Animal experiments used 56 5-week-old male SD rats.They were divided into 7 groups with no significant difference in their initial body weight.They were normal control group,high-fat model group,skim milk control group,soymilk control group,bacterial fluid intervention group,fermented skim milk test group and fermented soymilk test group.After 12 weeks of continuous feeding,the relevant indexes of rats were measured.The results of the study are as follows:1.Lactobacillus plantarum WW has no toxic side effects on rats.It can reduce fat accumulation in the liver,abdomen,kidney circumference and epididymis caused by high-fat diet and control weight gain.After high-fat diet rats fed L.plantarum WW 12 weeks,total cholesterol(TC),triglyceride(TG),and low-density lipoprotein-cholesterol(LDL-C)levels in serum decreased by 28.92%,22.47%,and 28.99%,respectively,while high density lipoprotein-cholesterol(HDL-C)increased significantly by 38.89%.The content of total bile acid(TBA)and malondialdehyde(MDA)in the serum of the bacteriostatic intervention group was significantly lower than that of the high-fat model group.Liver lipids were significantly lower than those in the high-fat model group and the skim milk control group,while the levels of alanine aminotransferase(ALT)and aspartate aminotransferase(AST)in serum and liver were significantly reduced.From histopathological analysis of liver,it can also be seen that L.plantarum WW reduced the degree of lipid deposition and vacuolization in liver tissue.Compared with the high-fat model group,the contents of TC,TG and TBA in the feces-treated group increased significantly by 17.02%,21.53% and 27.00%.The above results showed that L.plantarum WW can effectively reduce blood fat levels in rats with high-fat diet,reduce the occurrence of cardiovascular diseases,and at the same time relieve the liver damage caused by high-fat diet.2.After high-fat diet rats were given L.plantarum WW fermented skim milk for 12 weeks,serum TC,TG,LDL-C levels were significantly reduced by 32.45%,22.47%,24.64%,and TC,TG,LDL-C in the liver were significantly reduced by 29.67%,25.00%,and 27.27%,at the same time,serum and liver HDL-C levels increased significantly.Fermented skim milk significantly reduced serum TBA,MDA levels,and reduced serum and liver ALT and AST levels.From the liver index and liver pathological analysis,it can also be seen that fermented skim milk effectively reduces the accumulation of fat in the liver.The content of TC,TG and TBA in the feces of the fermented skim milk test group was significantly higher than that of the high fat model group,and the number of Lactobacillus and Bacteroides in the feces increased,at the same time,the number of Streptococcus in the feces decreased.The results showed that L.plantarum WW fermented skim milk can reduce cholesterol levels in rats,promote the excretion of cholesterol in the body with feces,relieve liver damage,and regulate intestinal microflora.3.L.plantarum WW fermented soymilk significantly reduced food intake,liver index,and fat coefficient in high-fat diet rats,controlled the increase of body weight in rats,and reduced the degree of lipid deposition and vacuolization in rat liver tissue.After soaking fermented soymilk for 12 weeks,the contents of TC,TG and LDL-C in serum of rats decreased significantly by 31.04%,20.97% and 18.84%,the contents of TC,TG and LDL-C in liver decreased significantly by 24.73%,22.83% and 18.18%,at the same time,serum and liver levels of HDL-C increased significantly.Fermented soybean milk also significantly reduced serum and liver ALT,AST levels and serum MDA,TBA levels.Fermented soybean milk significantly increased fecal TC,TG and TBA content,and the number of Lactobacillus and Bacteroides in the feces increased,at the same time,the number of Streptococcus in the feces decreased.The results showed that L.plantarum WW fermented soymilk can effectively regulate blood lipid levels in rats with high-fat diet,protect the liver,and regulate intestinal flora.
