Construction Of Quality Safety System Based On Prawn Industry Chain

Food safety problem is closely related to everyone in the country,in today's fast-speed spread media,food safety events may be amplified infinitely,causing the public event,not only affects people's physical and mental health,hinders food industry development,but also affects the effective operation of the national economy.Identifying,preventing and controlling the hazards in the food industry chain is the common goal and direction of the food industry and governments.As an important category of food,prawn "from the pond to the table",involves a lot of links,the mode of quality hazard is multifarious.Because many prawns industry chain links have been fully integrated into the highly complicated modern social division of labor,any problem in prawn industry chain of breeding environment,inputs,involved in the mode of farming,fishing process,slaughtering,processing equipment,processing procedures,transportation,marketing way and the way of cooking will endanger the quality safety of prawn.Therefore,the study of the quality and safety system of prawn,is of great reference value to aquatic product and even the whole food safety guarantee system.This dissertation consists of five chapters.The first chapter discusses the research background,research object,research purpose,significance and current situation of this paper.According to the literature sorting and analysis,the second chapter analyses all aspects of laws and standards,as well as the possible hazard factors and solutions respectively from prawn breeding,processing,transportation,storage,marketing,consumption,e-commerce and other industrial chain link through on-the-spot investigation and case study.The third chapter discusses the current situation of China's legal system,standard system,quality certification system,technical guarantee system,third party organization and administrative management system.The fourth chapter compares the quality safety management system of prawn with those in United States,European Union and Japan,and summarizes the suitable measures for China,Including the government's implementation of the whole process of supervision,the government's providing traceability system platform,the construction of a rapid warning system,and the strengthening of regional brand building.The fifth chapter,it is concluded that we should build the prawn industry chain quality security system of our country from the following four aspects: improve the quality safety of prawn consciousness,perfecting legal system,perfect the administrative mechanism and the content of the comprehensive policy support.Its administrative mechanism includes straightening out each unit of collaboration,enforcing and supervising the strict law,Set up a special early-warning institution,highlighting the government's public management functions,setting up a consumer protection mechanism and Perfecting the mechanism of reward and punishment,comprehensive policy support including protecting aquaculture environment,increasing investment in scientific research,and actively promoting the standardization construction and system certification,decreasing the intermediate links,improving breeding and processing of prawn circulation organization and scale level,and establishing a unified,prawn quality safety traceable information platform.
