Korean nationality diet as a part of Korean culture,it has important research significance.The current research on the Korean national catering industry from construction,economic research,art and otheraspects,the research scope is also more concentrated in the state of Yanbian.This is the scope of the study will be reduced to the city of Yanji in Yanji as a typical example,the present situation of Korean ethnic restaurants were further explored.Firstly,this paper introduces the Yanji City,expounds the background of Yanji public space development.Then the meal on the stage of history development meal was explored,from before the founding of new China,the period of the Cultural Revolution Period,the main social The meaning of the transformation and the cultural revolution,since the reform and opening up,China and South Korea established diplomatic relations after the five stages of the Korean nationality dining the historical background of the development are introduced in detail.Then from the origin of Yanji Korean diet and composition,the three aspects of Yanji Korean food classification and Yanji Korean catering industry characteristics in Yanji Korean food and beverage industry are introduced.The origin of the Korean diet from Yanji to Xianjing,including traditional Korean food culture from a point of view,the surrounding ethnic food culture,and foreign Korean food culture.According to Korean restaurant main operating characteristics,can be in Yanji City,the characteristics of Korean meal Drink soup restaurant hotel industry is divided into categories,that is too cold fish restaurant,class hotel,pastry shop,barbecue string class hotel,Steamed Rice class hotel,the national food comprehensive hotel 7 categories.Through the analysis of the current situation of the development of national catering industry in Yanji City,summarizes its experience and problems.Experience include:to make full use of the traditional Korean food culture,food culture and the neighboring nation of South Korea' s food culture resources;Yanji city is currently a lot of people diningenterprises have embarked on a standardized,large-scale,chain the road;the establishment of the Yanbian Korean Association for the people of Yanji traditional diet meals to the development of talent cultivation,Coordinate the specification,role information sharing.The main problems the lack of talent from the lack of clear industry standards,the government ignored the cheating behavior of holidays,food and beverage industry,scattered distribution,tastes change and inter industry combination of six aspects is discussed.Finally,the thesis,combining with relevant experience,starting from the behavior different,puts forward corresponding suggestions on the development of the food industry.First of all,including government support to continue to improve the relevant food standards,making full use of the food industry standards,nongovernmental organization,Dietetic Association,five aspects of the introduction of the relevant preferential policies and the development of the comprehensive project measures.Second,the organization should strengthen the association should play on the industry more substantial organizational function,should strengthen the coordination role in industry organizations.Specifically,the association should be started from the people food industry as a whole,on the dining industry concept,professional ethics,business activities,industry discipline,industry brand building,a the agreement between the business ethics,promote the main industry.Finally,from the perspective of their own industry,not only to make people keep traditional meals,and cannot rest on our laurels.It is necessary to learn from foreign food culture,but also with its own characteristics,so as to create more Korean cuisine.
