In the complex matrices,especially the complex matrices in the food system,are increasingly affecting people's lives.Beneficial trace elements to promote people's growth and maintain metabolism,disease control and prevention plays an important role;On the contrary,harmful trace elements is important environmental and food contaminants,mostly seriously affects human health,resulting in endocrine disorders,cancer and other diseases.These trace elements are often introduced during food processing production,but some harmful trace elements in food packaging,storage and transportation in the process of introduction;At the same time,the lack of beneficial trace elements in the part of the food or excessive add also in harm to people's health.Therefore,complex and quantitative detection of trace elements in food system is becoming a necessary before and after the food production process and factory sales of food safety detection means,has the very vital significance.Mass spectrometry as a kind of high sensitivity,high accuracy,high efficiency of large-scale analysis instruments,beginning in the 1920 s gradually become a kind of chemists used analytical instruments.In numerous analytical methods,mass spectrometry is also regarded as a kind of both high sensitivity and high specificity and in food,drug,such as material analysis is widely used in the field of instrument analysis method.But because of the complexity of the food system and target species diversity,the traditional mass spectrometry analysis method in sample pretreatment,target selectively,sample analysis speed etc faces some difficulties.This article system elaborated the basic theory and application of mass spectrometry,and in view of the complex food system,on the basis of previous studies using mass spectrometry technology has made the following work:1,the combination of frozen pre treatment and carboxyl derivatization technology,established a for free fatty acids in milk powder,mass spectrometry technology.Due to the efficient frozen extraction,the whole experiment process shows the for free fatty acid analysis efficiency improved significantly.In addition,the advantage of this experiment is its high sensitivity,and greatly recovery in the complex food matrix effect.In some domestic and foreign milk powder samples,14 kinds of free fatty acids were successfully detected.Fatty acid content is not the same in different samples,this may indicate that the quality of the milk powder is different.Experimental results are expected to become a practical analysis methods of free fatty acid in the complex matrix analysis.2,set up a new type of adsorbent extraction purification,gas chromatography-tandem mass spectrometry determination of polycyclic aromatic hydrocarbons in various food packaging materials.The use of the new type of adsorbent simplifies the sample pretreatment process,improved the efficiency of removing impurity as well as reduce the loss of extraction.Compared to the traditional solid phase extraction,the introduction of the new type of adsorbent shorten the time of the sample preparation;At the same time,compared with some classical adsorbent,new types of adsorbent on the type and efficiency of removing impurity has obviously improved,effectively reduce the complex matrix interference.Isotope internal standard method improved the accuracy of qualitative and quantitative analysis.The method was simple,high recovery rate,and was expected to be used for rapid detection of large quantities of samples.3,on the basis of previous studies,for ambient flame ionization mass spectrometry to do a certain improvement,set up a new method,based on improved ambient flame ionization mass spectrometry analysis of phthalic acid ester.Opened mass spectrometry analysis greatly shortens the time of sample analysis and improve the efficiency of the sample analysis.Flame ionization method at low temperature can guarantee the stability of the sample in the sample.The method is successful for seven kinds of phthalic acid esters' analysis.Experimental results are expected to become a practical analysis methods of phthalic acid esters in the complex matrix analysis,Especially in food complex matrix.
