Bacterial cellulose(BC)is a kind of super microscopic fiber net with high purity produced by some microbes effectively.The character of bacterial cellulose is more superior to botanical cellulose.It displays unique properties including three-dimensional net structure,high water holding capacity,better biocompatibility,no genetoxicity and no proliferation.In addition,BC also demonstrated good hydrophily,physical properties of gel,stability and no digestibility characteristic.As a hotspot research biomaterial in international,BC has applied in many fields successful Such as food industry,biochemical fields,medicine fields and so on.Due to different source and extract method of BC shows different properties and physiological function.So the properties,physiological function,improve food quality of BC produced by the strains screened by our lab are researched and physiological function of food contain BC also be testing.The results as follows:1.Properties of BC:The water holding capacity of BC membrane is 10.32g/g,while the pulverescent BC membrane is 9.83g/g,BC membrane superior to pulverescent BC membrane.Expansion of pulverescent BC membrane is 12.32mL/g,while the BC membrane is 6.04mL/g,BC membrane less than pulverescent BC membrane.The oil holding capacity of BC membrane to unsaturation oil and saturation oil is 8.96g/g and 9.65g/g while the pulverescent BC membrane is 8.65g/g and 9.53g/g,respectively,the oil holding capacity of BC membrane superior to pulverescent BC membrane.The clearance of BC membrane and pulverescent BC membrane to Pb2+ is 28.10%and 29.40%,respectively;adsorption quantity is 2.81 mg/g and 2.94mg/g,respectively.The clearance of BC membrane and pulverescent BC membrane to NO2-is 13.42%and 14.74%,respectively;adsorption quantity is 1.34mg/g and 1.47mg/g,respectively.The clearance of BC membrane and pulverescent BC membrane to cholesterol is 11.60%and 12.04%,respectively;adsorption quantity is 23.20mg/g and 24.08mg/g,respectively.The clearance of BC membrane and pulverescent BC membrane to sodium cholate is 31.20%and 32.40%,respectively;adsorption quantity is 31.20mg/g and 32.40mg/g,respectively,the clearance of pulverescent BC membrane on Pb2+,NO2-,cholesterol and sodium cholate superior to BC membrane.The cation exchange capacity of BC membrane and pulverescent BC membrane are feebly,the change of pH value is 1.32 and 1.52,respectively.The weight of BC membrane reduced 2.1%treated by hydrochloric acid,the weight of BC membrane increase 2.4%,5.2%and 5.2%treated by simulated gastric fluid,simulated intestinal juice,simulated gastric fluid and simulated intestinal juice,respectively.SEM demonstrated that BC membrand shows stability of space structure under such four conditions.2.Physiological function of BC:In the research of hypoglycemic of BC to diabetes mice modeling by alloxan,the BC medium dose reduce the weight of mice is same as control group,fasting blood glucose level less than 11.1mmol/L,the concentration of glycerin trilaurate,low density lipoprotein cholesterol and high density lipoprotein cholesterol are 1.44±0.31,0.32±0.06 and 3.37±0.42 mmol/L,respectively,same to the concentration of 1.30±0.15,0.28±0.08 and 2.78±0.35 mmol/L by control group,BC medium dose has the best effect on diabetes mice modeling by alloxan.In the process on antiobesity action of diet-induced obese mice,BC high dose reduce weight of obese mice to 24.53±1.37g has no significant to control group mice which weight is 24.92± 1.26g,glycerin trilaurate reduced to 1.34±0.15mmol/L same as which is 1.37±0.19mmol/L,total cholesterol reduced to 4.07±0.32mmol/L less than 3.03±0.28mmol/L of positive group,increase high density lipoprotein cholesterol to 2.81 ±0.17mmol/L has no significant to control group which is 2.83±0.18mmol/L,so BC high dose show the best effect on antiobesity action of diet-induced obese mice.In the process of bowel propulsion of normal mice,propulsion length of BC high dose and positive group are 19.31 ±4.52cm and 18.45±4.51cm,propulsion rate are 46.42±6.48%and 44.75±6.63%,respectively.So BC high dose show the best effect on bowel propulsion of normal mice.3.Improve food quality of BC:Yogurt add 3%BC of 0.1cm particle and 7%soft sugar increase the coagulability,cohesion,conglutination,adhesiveness and elasticity,make the surface more smooth,lubricious,daintily.Add 10%BC makes sausage the hardness,elasticity and chewing increase,and then lead texture tight,better taste.Add 3%BC has no effect on specific volume and shape,make elasticity and toughness increase,upgrade the colligate texture of steamed bread.4.Test physiological function of food containing BC:Add 4%BC yogurt intragastric administration for 2 weeks continuously can limit the increase speed and has auxo action on control weight of diet-induced obese mice.
