Higher vocational education is a significant way to cultivate applicable talents with high quality,and it shoulders the responsibility to send grass-roots staff and managers to various enterprises.Currently,the state encourages to develop vocational education,promote the reform of it,and improve the quality of talents who have received vocational education.In recent years,with the amazing development of catering industry,there's an increasingly fierce competition,and it leads naturally to the greater demand for talents.Meanwhile,there's an increasingly higher technical requirement for those who work in this field.Those talents with high quality and practical skill and ability gain much popularity with managers.With the development of hotel industry and the rise of vocational training,the catering study program is started by vocational schools.The course of catering service and management,which is quite practical,is the main course for this major.During the teaching process,it no longer satisfies the need of subject by adapting the traditional methods,The teaching method is pretty boring with merely theories and experiments included,it restrained the initiative,positivity and creativity of students and it has negative impact on the cultivation of students' comprehensive ability of practice.Project teaching method is to transform the theory into practice through specific programs under the guidance of mentors.Students are divided into groups to discuss and do research together.Program teaching method is a method which combines knowledge with skills,and with the motivation of accomplishing the program,it enables every single student to get involved in the practical activities personally,acquire knowledge and master skills.Compared with traditional teaching methods,it has more advantages.Based on analyzing the current teaching situation of catering major in vocational schools,this essay aims to put program teaching method into the teaching practice of catering service and management,make designs and analysis from the teaching,enhance the teaching quality of this major,promote the advancement of the major of catering management,and satisfy the talent demand of modern catering enterprises.This research is to analyze the problems existing in the teaching of catering major by interviewing teachers in vocational schools,put the program teaching method and the traditional teaching methods into practice by experiment during teaching the course of catering service and management,compare the influence of different teaching methods on the students' learning effects.After teaching,According to skill qualification test,the school internship performance,and comparison between final theory test and practical operation,It turned out that program teaching method is much effective than traditional teaching method in terms of learning effect.Applying program teaching method to the teaching process of catering major is helpful to promote teaching reform,arouse the enthusiasm of students,improve their study abilities,and raise their awareness of teamwork,and it enables the teaching to get close to the reality.Applying program teaching method to the teaching process has improved the students' comprehensive competitiveness of employment after graduation.In the vocational education reform,program teaching method should be widely used for major courses.
