Abstract/Summary:
Chinese mitten crab(Eriocheir sinensis)is commonly known as the fresh water crab,it has high nutritional value,taste value,such as the market demand characteristics.Gender is an important factor in the growth and nutritional quality Chinese mitten crab,comparison of male and female crab in the edible parts of nutrition and its related physiological mechanism conducive to guide consumption,direct production.The first part:By measuring both male and female crab edible parts of amino acids,does the research on gender effect of Eriocheir sinensis in amino acid composition.Using amino acid analyzer male and female crab muscle,gonad and hepatopancreas amino acid content.The results show that male and female crab edible parts of the amino acid content is highest in muscle,gonad secondly,hepatopancreas was the lowest.Total amino acid content in male crab muscle significantly higher than that of female crab(P<0.05),content of hepatopancreas extremely significant lower than that of female crab(P<0.01),gonad content is higher than that of female crab but no significant difference;male and female crab body essential amino acids are in line with the Food and Agriculture Organization and the World Health Organization and United Nations University ideal model requires,the female crab gonads and hepatopancreas of amino acid nutrition evaluation value superior male crab.The second part:By measuring both male and female crab edible parts of lipid content and fatty acid composition,studying gender impact on the composition of fatty acids in the body composition.Results show that the male and female crab muscle fat deposition in the least,female crab gonad and hepatopancreas total cholesterol levels significantly higher than that of male crab,triglyceride content in hepatopancreas significantly lower than male crab,triglyceride in ovaries significantly higher than that of testis(P<0.01);female crab monounsaturated fatty acid content in hepatopancreas significantly higher than that of male crab(P<0.05),saturated fatty acid content in hepatopancreas significantly lower than male crab(P<0.05),polyunsaturated fatty acid content in edible parts of no significant difference,the Food and Agriculture Organization and the World Health Organization recommended/n-3/n-6 in the male crab hepatopancreas significantly than the female crab(P<0.05).The third part:By measuring both male and female crab in the edible part,steroid hormone,growth hormone,content of fatty acid metabolism related enzyme(ACL,ACC,FAS,SCD)and fatty acid binding protein(FABP)gene expression,study of male and female factors on Eriocheir sinensis edible part inpact of the lipid metabolism.The results showed that growth hormone and steroid hormones in addition to the male crab in blood serum testosterone levels slightly higher than the rest of the difference was not significant(P<0.05).Female crab estradiol content is higher in hepatopancreas(P<0.05),and high content of progesterone(P<0.01),the male crab androstendione levels higher than female crab(P<0.01).In the gonad growth hormone in the male crab is higher(P<0.05),the male crab testosterone and high androstendione levels(P<0.01),high content of female crab progesterone and estradiol(P<0.01),there is no difference in growth hormone and steroid hormones in muscle.In the hepatopancreas,the ACL,the ACC and SCD content in the female is higher than male crab(P<0.05),FABP mRNA expression amount male crab is higher than the female(P<0.01).In the gonad,the male crab has the higher the ACL,SCD content(P<0.05),the ACC and FAS is higher than female crab(P<0.01).The ACL,the ACC and FAS,SCD content in the muscles is higher but no difference,FABP mRNA in female crab muscle is higher(P<0.05).This study shows that the amino acid and fatty acid composition in Eriocheir sinensis muscle is relatively stable,growth hormone,steroid hormones,and fat metabolism related factors have no significant difference,male crab muscle total amino acid content is higher than that of female crab,in the hepatopancreas is contrast that the female crab accumulate more.The content of triglycerides in the female crab hepatopancreas is decreased and mo no unsaturated fatty acids levels is high,and the expression of SCD and FABPmRNA is homology.Ovary accumulate triglycerides and C16:0,growth hormone is low,low content of ACL and ACC,triglyceride mobilization,involved in fatty acid metabolism decreased.
